Steak Tacos w/Cucumber-Avocado Salsa

- CUCUMBER-AVOCADO SALSA:
- 2 cups cucumber, seeded and diced
- 2 avocados, diced
- 1/2 red onion, diced
- 1/4 cup lime juice
- 1/4 cup fresh cilantro, chopped
- 3 jalapenos, seeded and minced to taste
- STEAK TACOS:
- 1 tbs chili powder
- 2 cloves garlic, minced
- 1/4 tsp ground cinnamon
- Pinch of cayenne pepper
- 1 1/4 lbs top sirloin steaks (about 1 1/4" thick)
- 12 (6") corn tortillas
- 3 cups red cabbage, shredded
- 1/2 cup fresh cilantro, chopped
- 1 lime, cut into wedges

- 2/3 cup brown rice
- 2/3 cup wild rice
- 3 cups low-sodium chicken broth
- 3 tablespoons unsalted pistachios, chopped
- 1 orange
- 10 large fresh basil leaves, sliced into ribbons
- 1/4 cup red onion, minced
- DRESSING:
- 1/3 cup red wine vinegar
- 1/4 cup olive oil
- 1 tablespoon orange juice
- 1 1/2 teaspoons Dijon mustard
- 1 teaspoon honey
- 1/4 teaspoon salt
Chocolate Souffle

- 2 tbsp unsalted butter
- 4 tbsp sugar
- 4 oz bittersweet chocolate, cut into small pieces
- 4 eggs, separated
- 2 tbsp orange liqueur
- 3 egg whites
- 1/2 lemon, juiced
- Powdered sugar, for garnish
- Unsweetened whipped cream
Teriyaki Chicken w/Roasted Scallions

1.Preheat oven to 450 degrees, with racks in upper and lower thirds
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1/2 cup honey
- 1 garlic clove, minced
- 1 teaspoon grated peeled fresh ginger
- 1 whole chicken (3 1/2 to 4 pounds), cut into 8 pieces
- 4 bunches scallions greens, cut into 2 1/2-inch pieces, whites halved lengthwise
- 1 tablespoon vegetable oil, such as safflower
- Coarse salt and ground pepper
Linguine w/Shrimp and Vegetables

- 3/4 bos (12 oz) linguine
- 2 tbsp olive oil
- 1 bunch (about 1 lb) asparagus, woody bottoms removed and cut into 1" pieces
- 2 clove garlic, minced (about 2 tsp)
- 1 lb lg shrimp, peeled and deveined
- 1/3 cup fresh lemon juice
- 1/2 cup dry white wine
- 1 cup chopped fresh flat-leaf parsley
- 1 pt cherry tomatoes, cut in half
- 1/4 cup freshly grated Parmesan cheese
- Salt and freshly ground black pepper to taste
Tossed Spinach Salad

In a large Salad bowl, combine the first six (or seven) ingredients
- Dressing:
- 1 pkg (10 oz) fresh spinach torn
- 1 pkg fresh sliced mushrooms
- 1 pkg sliced bacon (or turkey bacon) cooked and crumbled.
- 1 cup (4 oz) shredded cheddar cheese
- 3 hard boiled eggs, chopped
- 3 scallions, sliced
- (* I also use marinated mushrooms too, just a few)
- 1 cup ketchup
- 3/4 cup vinegar
- 3/4 cup olive oil
- 1/2 cup sugar
- 1 tsp salt
- 1 tsp worcestershire sauce
- (* Balsamic Dressing is mostly what I use, less fuss.)
Spicy Chicken Burgers

Heat oven to 400 degree F
- 1/4 cup low-fat plain greek yogurt
- 1 tsp white wine vinegar
- 1/2 tsp sugar
- 1/2 sm red onion, divided
- 1 ripe avocado, cut into 1" chunks
- 1 cup thinly sliced cucumber
- 1/4 portobello cap
- 1 cup frozen shelled edamame, thawed
- 2 cloves garlic
- 2 boneless, skinless chicken breasts (6 oz each), quartered
- 2 tbsp reduced-sodium soy sauce
- 1/4 tsp cayenne pepper
- 1 tbsp olive oil
- 4 whole-wheat English muffins (or whole grain buns), split
- lettuce leaves (optional)

Easy Garlic Broiled Chicken

- 1/3 cup butter
- 2 tbsp garlic, minced
- 2 tbsp soy sauce
- 1/8 tsp ground black pepper
- 2 tsp dried parsley
- 4 boneless chicken thighs, with skin
- 1 tbsp dried parsley, or to taste
