- 3/4 cup quinoa
- 8 ounces smoked wild Alaskan salmon, diced
- 2 large eggs plus 1 large egg white, lightly beaten
- 1/2 cup coarse dry breadcrumbs, preferably whole-wheat
- 1/2 cup finely chopped scallions
- 1/2 cup finely chopped fresh dill, plus small sprigs for garnish
- 1 teaspoon finely grated lemon zest
- 1/2 teaspoon freshly ground pepper
- 6 teaspoons extra-virgin olive oil, divided
- Lemon Sour Cream
- 1 cup reduced-fat sour cream
- 1 1/2 teaspoons finely grated lemon zest
- 1/2 teaspoon freshly squeezed lemon juice

1. Microwave the vegetables until slightly tender and drain
- 1 (32 oz.) “frozen” mixed vegetables (generic is fine)
- 1 c. chopped celery * optional ---
- or just use celery salt to taste
- 3/4 c. finely chopped onion (red onion is best)
- 1 c. mayonnaise
- 1 c. shredded Cheddar cheese

- 1/2 cup all purpose flour
- 1 beaten egg with 1 egg white
- 1/2 cup panko breadcrumbs
- 1/4 cup grated fresh Parmesan cheese
- 1/2 teaspoon smoked paprika
- Kosher salt and fresh ground black pepper
- 2 zucchini, sliced into 1/2 inch thick and 4 inches long

- 2 cloves garlic, finely chopped
- Fajitas
- 3/4 lb lean boneless beef top round steak, slightly frozen, cut into thin strips
- 1 onion, thinly sliced
- 1 red or green bell pepper, cut into strips
- 1 teaspoon cornstarch
- 1 / 4cup cold water
- 1/3 cup guacamole
- 4 Old El Paso® flour tortillas for burritos (8 inch; from 11-oz package), heated
- 1/3 cup Old El Paso® salsa (any variety)
Watermelon Cooler

In a food processor, blend watermelon, sorbet, and lemon zest until very smooth
- 1 1/2 lbs (4 cups) sliced seedless watermelon, rind removed
- 1 cup lemon sorbet
- 1 lemon, zested
- 1 1/2 cups cold water
- watermelon wedges and mint, for garnish

- 1/4 cup flour, all purpose or coconut to make gluten free
- 1 large egg
- Salt and pepper
- 1/4 cup chives or onions, optional
- 1/4 cup grated cheese, optional
- Flour for dredging
- 2 Tbsp Butter plus 2 Tbsp oil for frying
