Tacos Carne Asada

Lay the flank steak in a large baking dish and pour the mojo over it
- 2 pounds flank or skirt steak, trimmed of excess fat
- 1 recipe Mojo, recipe follows
- Olive oil, for coating the grill
- Kosher salt and freshly ground black pepper
- 16 (7-inch) corn tortillas
- Shredded romaine or iceberg lettuce, for serving
- Chopped white onion, for serving
- Shredded Jack cheese, for serving
- 1/2 cup Pico de Gallo, recipe follows

Turkey Cranberry Monte Cristo

- 8 slices bread (potato bread, challah, or any other soft bread)
- 1 cup fontina cheese, grated
- 8 slices cooked turkey breast

Nacho Cheese Dip

- 1 5oz can green chiles (chopped)
- 1/2 cup chopped onions
- 1 15oz can chili beans
- 1 16 oz salsa
- 3 cups shredded cheese
Chicken, Rice, and Green Bean Casserole

Preheat oven to 350ºF
- 10 3/4 ounces cream of mushroom soup
- 2 cups milk
- 1 cup white rice, uncooked (do not use instant rice)
- 2 cups chicken, cooked and cut into bite sized pieces
- 1 pound frozen green beans, slightly thawed
- 4 ounces mushrooms, drained
- 2 tablespoons pimentos, chopped
- 1 cup shredded cheddar cheese (use more if desired)
- 1 (2.8 oz. container) French fried onion rings (optional)
Peanut Butter Cake

Preheat oven to 350°F. Butter one 9" cake pan and line the bottom with parchment paper
- For the Peanut Butter Frosting:
- 1 1/4 cups (150 grams) all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup soft butter
- 1/4 cup creamy peanut butter
- 1 cup brown sugar
- 2 eggs
- 1/2 cup buttermilk
- 1/2 cup finely chopped peanut butter cups mixed with 1 tbsp flour (the candy tends to sink at the bottom if you don't mix it with a little bit of flour)
- 1/2 cup soft butter
- 1 cup creamy peanut butter
- 2 cups (240 grams) powder sugar
- 1/3 to 1/2 cup heavy cream (depending on your peanut butter thickness)
