Combine the flour, sugar, baking soda, salt, cinnamon
- Pecan Cream Cheese Frosting:
- 3 cups all-purpose flour
- 2 cups white sugar
- 1 teaspoon baking soda

- 1 (8 ounce can) crushed pineapple -do not drain
- 2 cups bananas, mashed or about 3 – 4 large bananas

- 1/4 cup unsalted butter, room temperature
- 8 ounces cream cheese, room temperature
- 1 pound box (about 3 2/3 cups) confectioners sugar, sifted
- 1 teaspoon pure vanilla extract
- 1/2 cup finely chopped pecans

Old-Fashioned Meat Loaf

Preheat oven to 375 degrees F
- Topping:
- 1 pound ground beef
- 1 1/4 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 egg, lightly beaten
- 8 ounces canned diced tomatoes with juice
- 1/2 cup quick-cooking oats
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon prepared mustard
SPINACH QUICHE IN A MUFFIN PAN W/ EASY CRUST

Preheat oven to 425°F. Crust: Mix flour and salt together in a bowl
- Crust:
- 1 stick butter [room temperature]
- 1 1/2 cups flour
- 1/4 teaspoon salt
- 4 tablespoons ice cold water
- Filling:
- 1/2 bell pepper [red and yellow make good color] [optional]
- 1 package frozen chopped spinach [defrosted and drained]
- 6 eggs
- 1/2 to 1 cup shredded cheese [Italian blends work well]
