- 2 T margarine
- 1/4 c sifted flour
- 1 t salt
- 1/2 t dry mustard
- 1/4 t pepper
- 2 1/2 c millk
- 2 c grated cheddar
- 8 oz macaroni (1 3/4 c dry)
- 1/4 c bread crumbs
Peter's Meat

Fill a saucepan with water so only the top half to third of the meat sticks out
- Water
- 1 lb. Rump roast
- Salt
- Pepper
- Minced onions
- 2 teaspoons five spice powder

- 1/4 cup self-rising flour
- 2 teaspoons granulated sugar
- 1/4 cup whole milk
- 1 tablespoon vegetable oil, plus more for cooking

Avocado Cheesecake with Walnut Crust

Heat oven to 350 degrees F
- 3/4 cup shelled walnuts
- 1 cup graham cracker crumbs
- 1 tablespoon sugar
- 1/2 teaspoon crushed anise seeds
- 1/4 teaspoon salt
- 1 (.25 ounce) envelope unflavored gelatin
- 1 lemon
- 1 1/2 cups skim milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 fully ripened Avocados from Mexico, halved, pitted, peeled and diced
- 1 (8 ounce) package fat-free cream cheese, softened and cut in pieces
Corn Casserole

Preheat oven to 350 degrees Put corn, beaten eggs, flour, salt & pepper into a large bowl and mix
- 8 cups corn kernels
- 4 eggs, beaten
- 2 T flour
- salt & pepper to taste

Hobbit Pie

- pâte brisée or 1 pkg refrigerated pie crust
- 6 TB Unsalted butter
- 1 1/2 lbs (680g) sliced Cremini mushrooms (a mixture of Cremini and Shitake is nice too)
- 2 cups (12 oz) (340g) Onion or Leek, chopped or sliced
- 2 – 3 cloves of Garlic
- 1/3 cup (1.5 oz) (42g) Whole Wheat Flour
- 1/3 cup (100ml) Dry White Wine
- 2 Large Eggs; Beaten
- 1 cup (8 oz) (225g) Cottage Cheese (You can use Ricotta too)
- 1 1/2 cups (6 oz) (170g) grated Sharp Cheddar or Emmental (I used 1 cup Provolone and 1/2 cup Pecorino Romano)
- 1 tsp Black Pepper
- 1/2 tsp Kosher Salt
- 1/4 cup (.5 oz) (15g) chopped Flat-Leaf parsley
- optional - 1 TB Porcini Powder

Jean's Squash Casserole

- 1 yellow onion diced
- 3 yellow squash (can use zuccini) that is sliced into pieces
- 1 small red or green pepper, optional, diced
- 1 egg (or two if large squash used)
- 1/4 cup milk
- 1/2 block of cheddar cheese grated
- small handful of bread crumbs (optional)
