Jean's Squash Casserole

Ingredients

  • 1 yellow onion diced
  • 3 yellow squash (can use zuccini) that is sliced into pieces
  • 1 small red or green pepper, optional, diced
  • 1 egg (or two if large squash used)
  • 1/4 cup milk
  • 1/2 block of cheddar cheese grated
  • small handful of bread crumbs (optional)

Preparation

Step 1

Saute' diced onion and bell pepper in a pan in a bit of butter.
Boil the squash in water until just turns soft.
Drain squash.
Can use a knife to run through the squash and cut them up some more, or just leave them large slices.
Combine all ingredients and put in a glass Pyrex dish or enamel pan.
Cook 350 degrees for 25-30 minutes until it looks firm.
