Slow Cooker Beef Brisket and Gravy

1. Place the brisket into a 6-quart slow cooker and generously salt and pepper on all sides
- 3 pound (1.5 kg) beef brisket
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 2 cups (500 ml) beef broth
- 2 tablespoons (30 ml) Worcestershire sauce
- 2 sprigs fresh rosemary (can use 1 tablespoon or 15 ml of dried rosemary instead)
- 1 bay leaf
- Lots of salt (about 2 teaspoons or 10 ml)
- Lots of freshly ground pepper (about 2 teaspoons or 10 ml)
- 2 teaspoons (10 ml) cornstarch
- 1/4 cup (60 ml) water
Thai Chile-Herb Dipping Sauce

- 1 tablespoon jasmine or other long-grain rice
- 6 to 8 dried whole Thai chiles (each about 2-inches long)
- 1 heaping tablespoon finely chopped scallion
- 2 tablespoons finely chopped fresh mint
- 2 tablespoons finely chopped fresh cilantro leaves
- 2 teaspoons sugar
- 3 tablespoons Thai or Vietnamese fish sauce (nam pla or nuoc mam)
- 1/3 cup fresh lime juice
Flourless Chocolate Cake

Preheat oven to 350°F (177°C)
- 6 6 6 T unsalted butter, room temperature
- 2/3 2/3 2/3 C walnut pieces
- 3/4 3/4 1 C & 1 T walnuts, chopped
- 8 8 8 oz dark chocolate, chopped
- 3 3 3 T unsweetened cocoa powder
- 1/4 1/4 1/4 tsp baking powder
- 1/4 1/4 1/4 tsp salt
- 1 1 1 C granulated sugar
- 4 4 4 lg eggs
- 1 1/2 1 1/2 1/2 tsp vanilla extract
Gambas al Pil Pil

You'll want to have plenty of bread on hand to capture the delicious pan juices from these garlicky crustaceans
- 4 to 5 Tbs. olive oil
- 4 garlic cloves, finely minced
- 1 tsp. red pepper flakes
- 1 tsp. sweet paprika
- 1 lb. medium shrimp, peeled and deveined
- 1 to 2 Tbs. fresh lemon juice
- 1 to 2 Tbs. dry sherry
- Salt and freshly ground black pepper, to taste
- 2 Tbs. chopped fresh flat-leaf parsley

- 4 lb. beef rump roast room temperature
- 1/2 cup flour
- Salt
- Pepper
- Garlic Powder
- Horseradish
- 1 Bunch of carrots, cut into large pieces
- 8 oz Bag of Cipolline Onions, peeled
- 6 Potatoes, quartered
- 4 Ribs of Celery, cut into large pieces
- 15-20 Fresh Mushrooms, brushed clean
Strawberry Lilies

In large mixing bowl, combine sugar, butter, cream cheese, and vanilla
- 1/4 c sugar
- 1 c butter, softened
- 1 3 oz pkg cream cheese, softened
- 1 t vanilla
- 2 c flour
- 1/4 t salt
- 1/2 c strawberry jam or Smuckers red plum jam
- powdered sugar to sprinkle on top
Kheema: Indian Ground Beef with Peas

In a large skillet, warm the oil over medium-high heat
- 3 tablespoons canola oil
- 1 medium onion, finely diced
- 4 cloves garlic, minced
- 1 (1-inch thumb) fresh ginger, peeled and minced
- 2 teaspoons ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon store-bought or homemade garam masala, recipe follows
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne, optional
- 1 pound ground beef
- 2 medium tomatoes, chopped
- Kosher salt and freshly ground black pepper
- 1 cup shucked fresh English peas or 1/2 cup frozen peas, thawed
- 2 teaspoons malt vinegar or apple cider vinegar
- 1/4 cup chopped fresh cilantro, plus a few extra leaves for garnish
- 4 chapatis or pitas, warmed
Asian Lettuce Wraps

Rinse whole lettuce leaves and pat dry, being careful not tear them
- 16 Boston Bibb or butter lettuce leaves
- 1 pound lean ground beef
- 1 tablespoon cooking oil
- 1 large onion, chopped
- 1/4 cup hoisin sauce
- 2 cloves fresh garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon rice wine vinegar
- 2 teaspoons minced pickled ginger
- 1 dash Asian chile pepper sauce, or to taste (optional)
- 1 (8 ounce) can water chestnuts, drained and finely chopped
- 1 bunch green onions, chopped
- 2 teaspoons Asian (dark) sesame oil
Veal Marsala

- 4 veal steaks
- Salt
- Pepper
- 1/2 cup flour
- 3 tablespoons butter
- 1/2 cup dry Marsala wine
- 1/2 cup water
