Simple Molasses Cake

- 1/2 cup butter
- 1/3 cup packed brown sugar
- 1 egg
- 1/2 cup milk
- 1 cup molasses
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 2 dashes ground cloves
- 1/4 teaspoon salt
Taco Salad

This is our favorite way to use leftovers from Bean Burritos
- Home Made Salsa:
- Romaine Hearts, Sliced
- 1/2 11-oz bag of Nacho Flavored Doritos, Crushed
- Shredded Mexican Cheese Mix
- Can of Hormel Chili with Beans
- 3-4 Scallions, Sliced
- 1 Small Can Black Olives, Sliced
- 1 Small Can Chopped Mild Green Chiles
- 1 Cup Tomatoes, Chopped
- 3/4 Cup Onions, Chopped
- 3/4 Cup Green Peppers, Chopped
- 2-3 Cloves Garlic, Minced
- 3 T Vinegar
- 2 T Olive Oil
- Salt & Pepper to taste
Savory Turkey Broccoflower Pie

Preheat oven to 425. Lay one of the crusts in a 9" quiche or 10" pie pan, and refrigerate
- Packaged pie crusts
- 4 cups broccoflower (or mixed broccoli & cauliflower florets)
- 4 T butter
- 3/4 lb. ground turkey breast
- 2 garlic cloves
- 4 T all-purpose flour
- 1 c chicken broth
- 1 c light cream
- 1 t salt
- 1 t dried thyme leaves
- 1 t Dijon-style mustard
- 1 T sherry
- 1 c. shredded Swiss cheese
Macadamia Nut or Pecan French Toast

Combine the 1st 6 ingredients
- 4 Eggs, large
- 1/4 c. sugar
- 1/4 t. nutmeg
- 2/3 c. orange juice
- 1/3 c. milk
- 1/2 t. vanilla extract
- 1 loaf Italian bread, cut into 1" pieces
- 1/2 c. macadamia nuts
- 2/3 c. margarine
Chex Mix

- 3 Cups Corn Chex
- 3 Cups Wheat Chex
- 3 Cups Rice Chex
- 1 Cup nuts (Lucy uses pecans)
- 1 Cup garlic bite-sized bagel chips
- 1 Cup bite-sized pretzels
- 6 TB. butter
- 2 TB. Worcestershire sauce
- 1 1/2 tsp. 4/S SEASONED SALT 3
- 1 1/2 tsp. ONION POWDER
- 3/4 tsp. GRANULATED GARLIC POWDER 1
Caramelized-Honey Nut And Seed Tart

Preparation Crust Pulse flour, powdered sugar, and salt in a food processor to combine
- Crust
- 1 1/2 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 teaspoon kosher salt
- 1/2 cup (1 stick) chilled unsalted butter, cut into pieces
- 2 large egg yolks
- Filling And Assembly
- 1/4 cup honey
- 1/4 cup granulated sugar
- 1/4 cup heavy cream
- 4 tablespoons unsalted butter
- 2 tablespoons light corn syrup
- 1/2 teaspoon kosher salt
- 1/2 teaspoon vanilla extract
- 2 cups mixed unsalted, roasted nuts (such as pecans, hazelnuts, peanuts, pistachios, and/or sliced almonds)
- 1/3 cup unsalted, roasted seeds (such as pumpkin and/or sunflower)
- Special Equipment
- A 9-inch-diameter springform pan
Roasted Carrots and Red Onions with Fennel and Mint

Preheat oven to 425°. Place carrots on a rimmed baking sheet and onions and fennel on another rimmed baking sheet
- 2 pounds small carrots (about 2 bunches), peeled, cut into 3-inch pieces
- 2 large red onions, each cut through root end into 8 wedges
- 1 fennel bulb, cut into 1/2-inch wedges
- 4 tablespoons olive oil, divided
- Kosher salt, freshly ground pepper
- 2 tablespoons raw sunflower seeds
- 1 teaspoon coriander seeds, coarsely chopped
- 1/2 teaspoon Aleppo pepper or a pinch of crushed red pepper flakes
- 1/2 teaspoon Hungarian hot paprika
- 2 tablespoons Sherry vinegar or red wine vinegar
- 1 tablespoon fresh lemon juice
- 2 tablespoons torn mint leaves
