Heat the olive oil in a wide based pot or Dutch oven over medium heat
- 2 tablespoons olive oil plus extra for drizzling on top
- 1 large onion, chopped (1 1/2 cups)
- 2 carrots, peeled and chopped (3/4 cup)
- 2 celery stalks, chopped (3/4 cup)
- 3 cloves garlic, thinly sliced
- 1/8-1/4 teaspoon red chili flakes (depending on how spicy you like it)
- Salt and pepper
- 1 tablespoon tomato paste
- 1 bunch (about 10 oz) Tuscan kale, chopped (stems and ribs removed)
- 1 can (14.5 oz) diced tomatoes
- 4 cups low sodium vegetable or chicken stock or water
- 4-5 sprigs fresh thyme
- 1 bay leaf
- 1 parmesan rind*
- 1 can (15.5 oz) cannellini beans, drained and rinsed
- 2 cups cubed, firm bread such as ciabatta, whole wheat or multigrain loaf
- 2 tablespoons grated parmesan cheese
Twice-Baked Potatoes in a Dish and Potato Skins

Preheat oven to 350° Fahrenheit
- 9 medium russet potatoes
- 4 ounces cream cheese
- 1/2 cup sour cream
- 4 tablespoons butter
- 3 cloves garlic, finely chopped
- 1/2 to 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 to 1/2 cup milk (if potatoes are too thick)
- 1 jar bacon bits, or a half pound of bacon, fried and cut into bits, or cut into bits and fried
- 2 1/2 to 3 cups shredded cheddar cheese
- canola oil to fry in
- sour cream, if desired
- 3 green onions, sliced

- 1 pound asparagus, trimmed
- 2 teaspoons extra-virgin olive oil
- 1 1/2 cups halved grape tomatoes
- 1/2 teaspoon minced fresh garlic
- 2 tablespoons balsamic vinegar
- 1/4 teaspoon salt
- 3 tablespoons crumbled goat cheese
- 1/2 teaspoon black pepper
Salmon Steaks with Avocado and Creme Fraiche Sauce

- For the salmon:
- 6 fresh salmon steaks (6 oz/175 g each)
- 6 small sprigs of fresh tarragon or parsley
- 6 small bay leaves
- 1 small lemon, thinly sliced
- 6 dessertspoons white wine
- salt and freshly milled black pepper
- For the sauce:
- 1 good-sized avocado
- 7 fl oz (200 ml) crème fraîche
- 1 small clove garlic, peeled
- 1 teaspoon sherry vinegar
- salt and freshly milled black pepper
- To garnish:
- 1 bunch watercress or other pretty mixed salad leaves

- 1/3 cup Frank's RedHot Hot Sauce
- 1/2 cup chicken stock
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1 box of pasta of your choice
