Heat oven to 250F degrees
- 1 cup chicken broth
- 1/4 cup white wine
- Juice from one lemon
- 2 cups whipping cream
- 2 Tablespoons butter
- 3/4 teaspoons sea salt
- 1/4 teaspoon black pepper
- 1/2 cup freshly grated Parmesan cheese
- 2 Tablespoons olive oil, divided
- 3 or 4 chicken breasts, pounded thin for even cooking
- 1/4 cup all-purpose flour, approximately (for dredging the chicken)
- Salt and pepper
- 3 tomatoes, sliced to 1/4" thickness
- 2 or 3 garlic cloves, minced
- 3 Tablespoons fresh basil, more if desired
- More Parmesan cheese, to taste
- Optional: Add some toasted pine nuts at serving
Buffalo Chicken Beer Cheese Soup

To a large dutch oven, heat the olive oil over medium heat
- 2 tablespoons olive oil
- 1 large yellow onion, diced
- salt and black pepper
- 4 cloves of garlic, finely minced
- 12 ounces light beer (like a pilsner to avoid bitterness)
- 4 cups low sodium chicken broth
- 1/3 cup all-purpose flour
- 2 1/4 cups low fat milk
- 1/4 cup Frank's Red Hot sauce (more or less to taste)
- 1 3/4 cup sharp white cheddar cheese
- 1/4 cup blue cheese crumbles
- 1 1/2 cups fully-cooked shredded chicken breast
- croutons, chopped chives, crispy bacon, blue cheese crumbles, Frank's Red Hot sauce (for toppings)
