Guacamole Avocado Dip

Mix all ingredients together
- 4 ripe avocados diced
- 2 ripe tomatoes diced
- 1/2 small onion minced or 1/4 of regular sized onion
- juice of 1 lemon
- 1 clove of garlic minced
- 1/2 tsp of sea salt
Slow Cooker Beef Barley Soup

Add all ingredients to a large 6 quart slow cooker, give a quick stir and cook on low for 8-10 hours
- 2.5 lb. chuck roast - cut into bite size pieces*
- 1 cup pearl barley
- 2 medium onions - chopped
- 1 green pepper - chopped
- 6 carrots - chopped
- 1 14oz. can diced tomatoes
- 48 oz. beef stock - more if needed
- 5 sprigs of fresh thyme - leaved pulled off stem
- 2 teaspoons kosher salt
- 1 teaspoon fresh cracked pepper
Lemon Shrimp with Herb Pilaf

Preheat oven to 425 degrees
- 1 1/2 cups long grain rice
- 1/2 cup extra virgin olive oil, plus 2 tbsp.
- 1/2 cup finely chopped parsley
- 2 tbsp. finely chopped dill
- 1/2 cup finely chopped scallions, white and light green parts (about 6)
- 2 cups packed baby spinach leaves, washed, dried and finely chopped (2 ounces)
- 1 cup of bottled clam juice
- 1 cup water
- coarse salt
- 1 large lemon, juiced and zested
- 24 large shrimp (or 36 medium shrimp) peeled, deveined and butterflied
- 1/2 cup dry white wine
- 2 cloves garlic, finely chopped
- 2 tbsp. capers, rinsed, dried and roughly chopped
- freshly ground pepper
Rachel Ray - Curry in a Hurry

- 4 pieces boneless, skinless chicken breast cut into chucky pieces and dusted with a handful of all-purpose flour (flour optional)
- 1 yellow medium Spanish onion, peeled, halved and cut into Â1/4 inch strips
- 1 piece fresh gingerroot, about 2 inches, grated
- 3 cloves garlic, minced
- 1 can (15 ounces) no-fat, low-sodium chicken broth
- 3 tablespoons mild curry past
- 2 tablespoons peanut or sesame oil *
- Coarse salt, to taste
- I also add coconut milk

Olive Oil, Garlic & Romano Cheese Mashed Cauliflower

Clean cauliflower and break into large flowerette pieces
- 1 head cauliflower
- salt & freshly cracked pepper
- 4-6 cloves garlic, peeled
- 1/3 cup extra virgin olive oil
- 1/3 c cream
- 1/3 c grated Romano cheese
- Salt & freshly cracked pepper
Roasted Dijon Potatoes

Preheat oven to 400ºF. Place all ingredients in a bowl and toss together
- 3 pounds Yukon Gold Potatoes, Peeled And Cubed
- 1 Tablespoon Good Dijon Mustard
- 1 teaspoon Brown Mustard
- 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Black Pepper
- 1 Tablespoon Dried Parsley
- 1 teaspoon Dried Thyme
- 2 cloves Garlic, Minced
- 2 Tablespoons Olive Oil
Bean Dip

with the motor running, drop the garlic into a blender or food processor and run until chopped
- 2 garlic cloves, peeled
- 1 15 oz can soybeans, rinsed and drained
- 1/4 cup tahini (sesame paste) or smooth peanut butter
- 3 tbsp. lemon juice
- 2 tbsp. olive oil
- 1/4 tsp ground cumin
- 1/4 tsp salt
- 1/4 cup chopped parsley
Tomato, Caper, and Artichoke Sauce

- Cooking spray
- 1/4 cup chopped onion
- 1 garlic clove, minced
- 1 3/4 cups presliced mushrooms
- 1 tablespoon capers
- 1 (14-ounce) can artichoke hearts, rinsed, drained, and chopped
- 1/2 cup tomato sauce
- 1/4 cup sliced ripe olives
- 1/4 cup dry white wine
- 1 (14.5-ounce) can diced tomatoes, undrained
GRILLED SHRIMP WITH ROASTED GARLIC-CILANTRO SAUCE

Preheat your oven to 400 degrees F
- Roasted garlic-cilantro sauce:
- 1.5 lb uncooked prawns
- Salt and pepper
- Olive oil
- 1 small head garlic, top trimmed off
- 1 cup chopped fresh cilantro leaves
- 1 lime, juice of
- 1 tbsp dry white wine
- 3 tbsp olive oil
- 2 tbsp chili sauce (or 1 tbsp dry chili flakes)
