Exploding Chicken Taquitos

This is the recipe from the Hungry Girl TV Show
- 10 oz can 98% fat free chunk white chicken breast in water, drained and flaked OR
- 10 oz baked chicken breast, flaked
- 1/2 cup salsa
- 8 small (6 inch) corn tortillas
- 1/3 cup shredded cheddar cheese (sub fat-free cheese if desired)
- 1/4 tsp dry taco seasoning mix ( I have a recipe in my library to make the mix)
- optional toppings/dips
Sun Dried Tomato Sauce

- 1/4 cup extra virgin olive oil
- 4 anchovies, chopped
- 1 clove garlic
- 1 tbsp capers, rinsed
- 1 cup oil pack sun dried tomatoes

Pineapple Salsa

Here are 5 pineapple salsa recipes
- 2 cups (12 oz) 1 inch pineapple pieces (Do NOT use canned pineapple)
- 3 jalapeno chiles, stemmed, seeded and cut into 1/2 inch pieces
- 1 cup fresh cilantro leaves
- 1/4 cup coarsely chopped red onion
- 2 garlic cloves, smashed and peeled
- 1 Tbsp fresh lime juice
- 1 Tbsp extra virgin online oil
- 1/2 tsp salt
- 1/2 tsp pepper
Spinach Quiche

Preheat oven to 425 degrees F Sprinkle cheese in pastry shell
- 4 oz gruyere cheese, shredded
- 1 9-inch unbaked pastry shell
- 1 medium onion, chopped
- 1 Tbsp butter or margarine

Twice Baked Sweet Potatoes

Absolutely Delicious! I like to save a little of the remaining filling in the potato skin and then eat the skin
- 2 Large sweet potatoes, even in size, scrubbed clean
- 2 Tbsp brown sugar
- 2 Tbsp butter, room temperature
- 2 oz. either cream cheese OR greek yogurt (I use the greek yogurt)
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp ground ginger
- Salt and fresh ground pepper to taste

- 2/3 cup dry bread crumbs
- 1 1/2 cups minced cooked ham
- 2 eggs, beaten
- 1/4 tsp celery salt
- 1/8 tsp white pepper
- 6 hard-cooked eggs
- Mustard Sauce (Blend well, 2/3 cup mayonnaise, 4 tsp prepared mustard and 2 tsp sugar)
