Twice Baked Sweet Potatoes

Absolutely Delicious! I like to save a little of the remaining filling in the potato skin and then eat the skin. It is sooo good!

Ingredients

  • 2 Large sweet potatoes, even in size, scrubbed clean
  • 2 Tbsp brown sugar
  • 2 Tbsp butter, room temperature
  • 2 oz. either cream cheese OR greek yogurt (I use the greek yogurt)
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground ginger
  • Salt and fresh ground pepper to taste

Preparation

Step 1

Preheat oven to 375 degrees.

Poke the sweet potatoes, all over, with a fork. Place the potatoes on a sheet tray and bake for 1 hour or until soft. Remove from oven and let cool enough to handle.

Split potatoes and remove the flesh to a medium size bowl, reserving the skins. In another bowl, add the brown sugar, butter, cream cheese OR greek yogurt and the spices. Mash with a fork or rubber spatula.

Add the butter mixture to the bowl with the sweet potatoes and fold in or mash completely. Add the filling to the potato skins and place back on the tray. Bake for another 15 minutes or until golden brown.
