Cincinnati Chili

Cincinnati Chili is a regional chili con carne, with your "not normal" chili seasonings
- 2 Tbsp Oil, coconut oil to keep it Paleo
- 1 large onion, chopped
- 1 lb ground beef, grass fed to keep it Paleo
- 3 cloves garlic, minced
- 1 Tbsp chili powder
- 1/2 tsp allspice
- 1 tsp cinnamon
- 1 tsp cumin
- 1/4 tsp cayenne pepper
- 1/2 tsp sea salt
- 2 tsp paprika
- 1/8 tsp cloves
- 1 1/2 Tbsp unsweetened cocoa powder
- 1 15oz can tomato sauce OR 15oz homemade tomato puree
- 1 Tbsp worcestershire sauce
- 1 Tbsp apple cider vinegar, raw vinegar to keep it Paleo
- 1 cup water
Torta Della Nonna-Grandma's Cake

- Make an 11 inch tart:
- For the dough:
- 3 cups of all-purpose flour
- 3/4 cup sugar
- zest of one lemon, grated
- pinch of salt
- 6 oz unsalted butter
- 2 eggs
- 1 egg yolk
- 1 tsp vanilla
- For the custard pastry cream:
- 4 cups milk
- 1/2 lemon (peel lemon in one piece and set aside)
- 6 egg yolks
- 1/2 cup all purpose flour
- 1 cup sugar
- 1 tsp vanilla extract
- For the top:
- 4 oz pine nuts (you can substitute with slivered almonds)
- 2 Tbsp milk
- powdered sugar to decorate
Honey Caramel Sauce

1. Place cream in a microwave safe dish and heat in microwave until just boiling
- 1/2 cup heavy cream
- 2 Tbsp water
- 1/3 cup sugar
- 1/8 cup honey
Turnovers and Turnover Crust

- 3/4 cup butter or shortening, cold and sliced
- 1/2 tsp salt
- 2 cup flour
- 1/4 cup ice cold water

Spicy Potato Salad

Transform regular potato salad into a spicy dish
- 3lb.3 lb. small potatoes (white, yukon gold, red, russets)
- kosher salt
- 1/4cup1/4 cup buttermilk
- fresh ground black pepper
- 3tsp3 tsp salt, divided
- 1/2cup1/2 cup celery, chopped
- 1/2cup1/2 cup red onion, chopped
Creamed Corn - Gulliver's II

Cut the corn from the cobs and place in saucepan with whipping cream
- 8 ears corn
- 1 cup whipping cream
- 2 tsp salt
- 1 tsp sugar
- butter or margarine
- 2 tsp flour
- grated parmesan cheese
Spicy Black Bean Stew with Lamb Sausage

1. In a large enameled cast-iron Dutch oven or heavy pot, heat oil over moderately high heat
- 2 Tbsp olive oil
- 1 lb spicy lamb sausage, casings removed and meat crumbled
- 1 red onion, chopped
- 1 large carrot, chopped
- 1 celery stalk, chopped
- 1 jalapeno, seeded and thinly sliced
- salt
- 4 garlic cloves, finely chopped
- 1/2 tsp ground cumin
- 1 lb black beans, soaked overnight and drained
- 1 chipotle in adobo with sauce, minced
- 6 cups water
- 2 Tbsp lime juice
- Steamed rice, chopped cilantro, and orange wedges for serving
Whole Wheat Sandwich Bread - Gluten Free

This is an excellent Whole Wheat Bread that is gluten free
- Makes 2 Loaves, 9x5 loaf pan
- 3 cups White wheat flour OR All-Purpose flour*
- 4 cups Whole wheat flour
- 3 tsp Salt
- 1/3 cup honey
- 2 1/4 tsp yeast
- 2 3/4 cups warm water (100-105 degrees)
- 1/4 cup olive oil (Better quality oil will help to yield better flavor. I use Trader Joe's
- Extra Virgin California Estate Olive Oil)
- 1/4 cup vital wheat gluten **(optional)
- Mix the flours in a separate bowl, with a whisk, to combine well.
- 1 . Mix the water and the yeast in a large bowl. Allow to sit 2-3 minutes.
- 2 . Gently stir in the Honey, Salt and Olive Oil
- 3 . Slowly add the flour while you stir. Mix until all of the flour is incorporated and the dough begins to come off of the side of the bowl.
- 4 . On a lightly floured surface, knead for 5 minutes, until the dough is smooth and elastic. You may need more flour to prevent the dough from becoming too sticky.
- 5 . Place the dough in a large bowl. Grease plastic wrap (you can use cooking spray or olive oil, spread on with a paper towel). Cover the dough with the plastic wrap and allow dough to rise until doubled, about 70 minutes.
- 6 . Punch the dough down and shape into loaves. Place loaves in lightly greased 9x5 loaf pans and cover each with greased plastic wrap.
- 7 . Allow them to rise again for 30 min-1 hr (usually takes around 50 minutes). Then uncover and bake, at 375 degrees for 30-35 minutes, until the crust is lightly browned and bread sounds hollow when lightly tapped
- Bread keeps best in an airtight bag, in the refrigerator. The bread freezes very well by wrapping tightly in plastic wrap and putting it in an airtight freezer-safe ziploc bag.
Creamed Corn - Gulliver's

This is the cream corn recipe from the restaurant Gulliver's
- 2 20oz pkg frozen corn
- 8 oz whipping cream
- 8 oz whole milk
- 1 tsp salt
- white pepper
- 6 tsp sugar
- 2 tbsp melted butter
- 2 tbsp flour

This recipe will take you 1 1/2 hours of total time
- Rice Mixture:
- 1 med bag of rice (the cheaper the better, like Uncle Ben's)
- 1 pkg saffron
- 2 cartons of chicken stock
- 1 1/2 cups of grated romano cheese
- 1 stick softened butter
- 6 egg yolks
- Filling:
- 1 lb ground beef
- 1 small can tomato paste
- 1 large onion, chopped
- 1 bag/box frozen peas, thawed
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp sugar
- Outside:
- Italian style breadcrumbs
- 6 egg whites + 2 Tbsp water
- Oil for deep frying
