Chocolate Crackle Cookies

1. Lightly grease two cookie sheets
- 1/2 cup unsalted butter, cubed and softened
- 2 cups light brown sugar
- 1 tsp vanilla
- 2 eggs
- 2 oz semisweet chocolate, melted
- 1/3 cup milk
- 2 3/4 cups all-purpose flour
- 2 Tbsp cocoa powder
- 2 tsp baking powder
- 1/4 tsp ground allspice
- 2/3 cup chopped pecans
- confectioners' sugar, to coat
Fish Stock

Do NOT allow the fish stock to boil
- 4 lbs fish heads and carcasses (only white-fleshed or non-oily fish for this stock)
- 2 quarts water
- 1 small onion, quartered
- 1 1/2 inch piece fresh ginger, peeled and quartered
Hummus bi tahini & cumin - (Silver Palate)

This twist on middle eastern hummus includes cumin, which gives it a great taste
- 4 cups garbanzo beans, drained
- 1/2 cup tahini
- 1/3 cup warm water
- 1/3 cup best quality olive oil
- juice of 2-3 lemons
- 4 or more garlic cloves
- 1 1/2 tsp salt
- 2 tsp ground cumin
- fresh ground pepper to taste
- 1/2-1 cup dry cured olives, chopped (not original to Silver Palate recipe, but a great add)
Red Wine Chocolate Cake

Cabernet Sauvignon is a good choice for this cake
- CAKE:
- 1/2 cup unsalted butter (4 oz) melted, plus more for greasing
- 1 1/4 cups all purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1 cup granulated sugar
- 1 large egg, room temperature
- 1 cup Cabernet Sauvignon, at room temperature
- 1 tsp pure vanilla extract
- GANACHE:
- 1 (3 oz) semisweet chocolate baking bar, finely chopped
- 2 Tbsp cold unsalted butter, diced
- 1 Tbsp light corn syrup
- 1/4 cup powdered sugar, sifted
- 2 Tbsp Cabernet Sauvignon, warmed
- Flaky sea salt
Tart Crust for Dessert

Fill this dessert crust with just about anything
- 8 Tbsp unsalted butter, melted
- 3 Tbsp granulated sugar
- 1/4 tsp fine salt
- 1 1/4 cups all-purpose flour, and more as needed
Vegan Chocolate Buttercream Frosting

1. In a medium bowl, sift the powdered sugar and cocoa together
- 1/2 cup vegan shortening, non-hydrogenated
- 1/2 cup vegan butter, (earth balance), non-hydrogenated
- 2 1/2 cups powder sugar, sift to remove clumps
- 1 cup cocoa powder
- 1 1/2 tsp vanilla extract
- 1/4 cup almond OR rice milk
Vegan Cinnamon Roll Cupcakes

Don't pass cause they're VEGAN!!! The taste of these cupcakes are excellent!
- Dry Ingredients:
- 1 1/2 cup all purpose flour
- 1 cup sugar
- 3/4 cup brown sugar
- 1/3 cup pecans, chopped
- 2 Tbsp cinnamon
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- Wet Ingredients:
- 1/4 cup vegan margarine (earth balance), softened
- 1/4 cup oil (sunflower, grape seed or vegetable)
- 1/4 cup oil
- 1/4 cup vegan vanilla yogurt
- 1/3 cup applesauce
- 1/3 cup vegan sour cream
- 2/3 cup non dairy milk
- 1 Tbsp vanilla
- Frosting Ingredients:
- 2 cups powdered sugar
- 4 Tbsp non dairy milk
- 1 Tbsp vegan margarine (earth balance), softened
- 1 Tbsp vanilla extract
Turkey Meatballs - Italian Style

This recipe yields 30 meatballs
- 1 1/2 lbs ground lean turkey
- 2 Tbsp butter, softened
- 1/4 cup shredded Parmesan cheese
- 2/3 cup dry Italian bread crumbs
- 1/3 cup chopped fresh parsley
- 3 Tbsp chopped fresh oregano (can substitute dried oregano 1 1/2 Tbsp)
- 2 tsp chopped fresh rosemary (can substitute dried rosemary 1 tsp)
- 1 tsp dried mustard
- 1/4 cup tomato sauce OR roasted tomatoes
- 1/4 tsp salt
- 1/2 tsp crushed red pepper
- 3 garlic cloves, minced
- 2 tsp butter, melted, for brushing meatballs

- 1 cup plus 1 Tbsp unsalted butter, chopped

- 1 cup golden raisins
- 2 cups beer
