Spinach Quiche

  • 4 oz gruyere cheese, shredded
  • 1 9-inch unbaked pastry shell
  • 1 medium onion, chopped
  • 1 Tbsp butter or margarine
  • 4 eggs
  • 2 cups whipping cream
  • 3/4 lb spinach, cooked, drained and chopped
  • 1/2 tsp salt
  • dash nutmeg
  • dash white pepper



Step 1

Preheat oven to 425 degrees F

Sprinkle cheese in pastry shell. Cook onion in butter, in a small skillet until tender. Mix eggs, cream, spinach, onion, salt, nutmeg and white pepper. Pour over cheese. Bake until knife inserted 1 inch from edge comes out clean, about 30-35 minutes. Let stand 10 minutes before serving
