Spinach Pies - Fatayer

1. Make the dough; In a large mixing bowl, combine the yeast with water, oil and salt
- For the Dough:
- 8 cups all purpose flour
- 1/2 cup vegetable oil
- 1 cake yeast or 1 envelope quick rise yeast
- 1 Tbsp salt
- 3 cups lukewarm water, approximate
- For the Filling:
- 2 bunches fresh spinach or 2 pkg (10 oz) chopped frozen spinach, defrosted
- 1/8 tsp allspice
- 1/4 cup olive oil
- 3/4 cup lemon juice
- salt and pepper, to taste
Vinaigrette Seven Ways

Use the basic vinaigrette recipe and add different items to change it up
- 3 Tbsp red wine vinegar
- 1 garlic clove, minced
- 1 tsp dijon mustard
- 3/4 tsp kosher salt
- 1/2 tsp pepper
- 3/4 cup extra virgin olive oil
Fatayer (Lebanese Spinach Pies)

- Dough:
- 8 cups all-purpose flour
- 1/2 cup oil, usually vegetable or canola
- 1 packet quick-rise or cake yeast
- 1 Tbsp salt
- approximately 3 cups lukewarm water
- Spinach Filling:
- 2 bunches of fresh spinach or 20 oz. chopped, frozen spinach, defrosted
- 1/8 tsp allspice
- 1/4 cup olive oil
- 3/4 cup lemon juice
- Salt and pepper, to taste
Chicken Avocado Lime Soup

1. In a large pot, heat 1 Tbsp olive oil over medium heat
- 1 1/2 lbs boneless skinless chicken breasts
- 1 Tbsp olive oil
- 1 cup chopped green onions, including the whites. mince the whites
- 2 jalapeños, seeded and minced
- 2 cloves garlic, minced
- 4 (14.5oz) cans of low sodium chicken broth OR 60 oz homemade chicken broth
- 2 roma tomatoes, seeded and diced
- 1/2 tsp ground cumin
- salt and freshly ground pepper
- 1/3 cup chopped cilantro
- 3 Tbsp fresh lime juice
- 3 medium avocados, peeled, cored and diced
- Tortilla chips, cheese and sour cream are all optional for serving
Poppy Seed Roll

1. Place poppy seeds into a food processor and process until seeds are ground, about 1 minute
- Dough:
- 1/2 lb poppy seeds
- 3/4 cup white sugar
- 1 Tbsp butter, melted
- 1 tsp lemon juice
- 1/2 cup hot milk
- 1/4 oz pkg active dry yeast
- 1/2 cup warm water (100 degrees F)
- 2 Tbsp white sugar
- 2 cups all purpose flour, or more if needed
- 1/2 tsp salt
- 1/4 cup butter, chilled
- 1 egg, separated - white reserved
Broccoli Beef

This is a Paleo recipe. You can substitute for the coconut oil (oil of your choice) and liquid amines (soy sauce)
- Sauce: 1/3 cup liquid aminos OR soy sauce
- 2 Tbsp fish sauce
- 2 tsp fresh ginger, minced
- 2 garlic cloves, minced
- 1/2 cup water
- 1/4 cup raw honey or pure maple syrup
- 2 Tbsp arrowroot starch
- Broccoli: 2 tsp coconut oil OR oil of choice
- 4 cups Broccoli florets
- Beef: 1 Tbsp coconut oil OR oil of choice
- 1 lb flank steak or skirt steak or cube steak, cut into thin strips
Gnocchi alla Romana

- 3 cups low sodium chicken stock
- 3/4 cup semolina flour
- 1 tsp salt
- 1 large egg
- 3 Tbsp unsalted butter, room temperature
- 1/3 cup freshly grated parmesan

- 1/2 cup hazelnuts
- 1 3/4 cornflakes
- 1/2 cup golden raisins, chopped
- 1/4 cup pistachios, chopped
- 1/2 tsp kosher salt
- 11 1/2 oz milk chocolate, finely chopped, (2 cups)
- 1 1/2 oz white chocolate, finely chopped.
Patatas Bravas II

1. In a medium saucepan of boiling water, blanch the tomatoes just until the skins wrinkle, about 30 seconds
- 1 1/4 lbs medium tomatoes, cored and scored on the bottom with an X
- 2 Tbsp extra virgin olive oil, plus more for frying
- 2 tsp sugar
- kosher salt
- 1/2 tsp Louisiana style hot sauce
- 2 lbs russet potatoes, peeled, cut into 1 inch pieces and patted dry
- 1/2 cup mayonnaise mixed with 1 Tbsp water
Zucchini Parmesan Crisps

- 1 lb zucchini
- 1/4 cup shredded parmesan (heaping)
- 1/4 cup panko (heaping)
- 1 Tbsp olive oil
- 1/4 tsp kosher salt
- ground pepper to taste
