1. Make the dough; In a large mixing bowl, combine the yeast with water, oil and salt

  • For the Dough:
  • 8 cups all purpose flour
  • 1/2 cup vegetable oil
  • 1 cake yeast or 1 envelope quick rise yeast
  • 1 Tbsp salt
  • 3 cups lukewarm water, approximate
  • For the Filling:
  • 2 bunches fresh spinach or 2 pkg (10 oz) chopped frozen spinach, defrosted
  • 1/8 tsp allspice
  • 1/4 cup olive oil
  • 3/4 cup lemon juice
  • salt and pepper, to taste

  • 1 1/2 lbs boneless skinless chicken breasts
  • 1 Tbsp olive oil
  • 1 cup chopped green onions, including the whites. mince the whites
  • 2 jalapeños, seeded and minced
  • 2 cloves garlic, minced
  • 4 (14.5oz) cans of low sodium chicken broth OR 60 oz homemade chicken broth
  • 2 roma tomatoes, seeded and diced
  • 1/2 tsp ground cumin
  • salt and freshly ground pepper
  • 1/3 cup chopped cilantro
  • 3 Tbsp fresh lime juice
  • 3 medium avocados, peeled, cored and diced
  • Tortilla chips, cheese and sour cream are all optional for serving
