Potato Puffs

1. Place potatoes in a large saucepan; add water to cover
- 4 lbs. potatoes, peeled and cubed (about 11 cups)
- 1/2 cup 2% milk
- 1/4 cup butter, cubed
- 1 1/2 tsp salt
- 1/2 cup shredded cheddar cheese
- 1 1/2 cup crushed cornflakes OR crushed Panko Bread Crumbs (i use the Panko)
- 6 Tbsp sesame seeds, toasted
Chocolate Chip Cookies

Preheat oven to 350 degrees Cream together the butter, white sugar and brown sugar, until smooth
- 1 cup butter, softened
- 1 cup white sugar
- 1 cup brown sugar, packed
- 2 eggs, room temperature
- 2 tsp vanilla extract
- 3 cup all purpose flour
- 1 tsp baking soda
- 2 tsp hot water
- 1/2 tsp salt
- 2 cup chocolate chips
- 1 cup walnuts, chopped
Olive Tapenade

- Tapenade #1:
- 3 cloves garlic
- 1 cup Kalamata Olives, pitted
- 2 tbsp capers
- 3 tbsp chopped fresh parsley
- 2 tbsp lemon juice
- 2 tbsp olive oil
- salt and pepper to taste
- Tapenade #2:
- 1/2 lb. pitted Kalamata Olives
- 2 anchovy fillets
- 1 small clove garlic
- 2 tbsp capers
- 2-3 basil leaves, fresh
- 1 tbsp lemon juice
- 2 tbsp olive oil

- 12 oz Arborio Rice
- 4 cups heated stock (veggie, chicken or beef)
- 1 onion, chopped
- 1/2 tsp butter
- parmesan or other grated cheese
- 4 oz dry white wine
- 1/4 cup cream
- salt and pepper to taste
- You can also use a vegetable or two in this (mushrooms, broccoli, beans, etc)
Dried Chile Salsa

You can use any dried chiles that you want to try different flavors
- 1 1/2 oz dry chiles de arbol
- 1 1/2 oz dry ancho chiles
- 1 med white onion, chopped
- 4 cloves garlic, peeled
- 1 Tbsp kosher salt
- 1/3 cup distilled white vinegar
- 1 1/2 cup water
Olive and Rosemary Muffins

1. preheat oven to 3750 degrees
- 1 1/2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1 tsp salt
- 2/3 cup polenta
- 1/3 cup sliced black olives
- 2 garlic cloves, finely chopped
- 1 cup milk
- 1/4 cup light olive oil
- 1 egg
- 2 tsp finely chopped fresh rosemary
- 2 stems rosemary, small sprigs picked
Roasted Chicken Drumsticks

1. In a 9x13 pan or oven ready dish, coat the bottom with a thin layer of olive oil 2

Banana Bread

Preheat oven to 350 degrees With a wooden spoon, mix butter into smashed bananas
- 3-4 bananas, ripe, smashed
- 1/3 cup melted butter
- 1 cup sugar
- 1 egg, room temp, beaten
- 1 tsp vanilla
- 1 tsp baking soda
- pinch salt
- 1 1/2 cup all purpose flour
Applesauce

Peel and core the apples and cut them into quarters
- 6 apples, organic or fresh picked sweet apples are the best apples to use,
- 1 cup water
- 1 Tbsp fresh lemon juice
- 1 tsp sugar, optional
- 1/4-1 tsp cinnamon, optional
Almond Thin Cracker Crisps

Finding a healthy cracker at the market is a near impossible task
- 3/4 cup Almond Flour (If you don't have almond flour, place 1 cup almonds in a food processor and process until you have a flour texture. This is how almond flour is made)
- 1 egg white
- 1/4 tsp garlic powder OR granulated garlic
- 1/4 tsp onion powder
- 3/8 tsp celtic sea salt (do NOT use iodized table salt in this recipe)
- Do NOT pack the Almond Flour and level it with a knife
- You can add or subtract any spices to this recipe.
