Coconut Macaroons

1. Preheat the oven to 325 degrees F
- One 14-oz bag sweetened shredded coconut (such as Baker's Angel Flake)
- 7/8 cup sweetened condensed milk
- 1 tsp vanilla extract
- 2 large egg whites
- 1/4 tsp salt
- 4 oz semi-sweet chocolate, best quality such as Ghirardelli, chopped (optional)

- 6 cloves garlic, minced
- 10 oz spinach, large stems removed, leaves washed and cut crosswise into 1 inch strips
- 1 lb farfalle
- 1/4 lb sliced prosciutto, cut crosswise into 1/4 inch strips
- 1/2 tsp salt
- 1/2 tsp fresh ground pepper
- 1/3 cup grated parmesan
Chai Latte Instant Tea Powder Blend

This recipe will replace any chai latte instant blend
- 1 cup nonfat dry milk powder
- 1 cup powdered non-dairy creamer
- 1 cup french vanilla powdered non-dairy creamer
- 2 1/2 cups white sugar
- 1 1/2 cups unsweetened instant tea
- 1 1/2-2 tsp ground ginger
- 2 tsp ground cinnamon
- 1 tsp ground cloves
- 1 tsp ground cardamom
- Optional adds: 1 tsp ground nutmeg, 1 tsp ground allspice, 1/4 tsp white pepper)

- 3 lbs potatoes, thinly sliced
- 1/2 onion, thinly sliced
- 9 Tbsp all-purpose flour, divided
- 6 Tbsp butter, diced and divided
- salt and ground black pepper to taste
- 3 cups whole milk, or as needed
Chicken Florentine

1. Place chicken between 2 sheets of plastic wrap and pound to even 1/2-inch thickness
- 2 (6-8 oz) boneless, skinless chicken breasts
- salt and pepper
- 2 Tbsp vegetable oil
- 6 oz baby spinach (6 cups)
- 1 small shallot, minced
- 1 garlic clove, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1/4 tsp grated lemon zest plus 1 tsp juice

- You will need:
- 15 lbs very ripe whole Roma tomatoes or other low-moisture tomatoes (you can use juicier heirloom varieties, but they won't hold their shape as well)
- 1/4 cup Bottled lemon juice
- 6 Tbsp kosher salt
- 12 fresh basil leaves
- 6 (1-quart) wide mouth jars with sealable lids and rings
- Water bath canner, or stockpot, and canning rack
- Jar lifter tongs
- wide-mouth funnel
Prosciutto Wrapped Shrimp with Bourbon BBQ Sauce

1. Make the bbq sauce. In a medium skillet, heat the olive oil
- BBQ Sauce:
- 1 Tbsp extra virgin olive oil
- 1 medium onion, halved and thinly sliced
- 1 tsp chopped rosemary leaves
- 1 tsp chopped garlic
- 2 Tbsp bourbon
- 2 Tbsp brown sugar
- 1 Tbsp dijon mustard
- 1 Tbsp apple cider vinegar
- 1/2 cup prepared bbq sauce, preferably a less sweet brand
- dash of worcestershire sauce
- dash of hot sauce
- salt and fresh ground pepper
- SHRIMP:
- 24 extra-large shrimp, shelled and deveined
- 1 Tbsp extra virgin olive oil
- salt and fresh ground black pepper
- 12 slices of prosciutto, halved lengthwise
- 2 Tbsp chopped flat leaf parsley
- Lime wedges, for serving
