Vegan Peanut Butter Frosting

This is a great frosting for Vegan Cupcakes
- 1/3 cup creamy peanut butter, salted, bring to room temp
- 1/3 cup vegan butter, (earth balance), bring to room temp
- 1 cup powder sugar
- drops of vanilla extract
- 3 Tbsp non-dairy milk
Paleo Mint Chip Coconut Bark

This is a delicious bark if you like that chocolate-mint combination
- 1 cup coconut oil, softened
- 1/2 tsp pure vanilla extract
- 1/2 - 1 tsp pure peppermint extract
- 1-2 Tbsp dark chocolate shavings or mini dark chocolate chips, (use the amount you like)
- 1-2 Tbsp fresh mint, finely chopped
- pinch sea salt
Indonesian Meatballs

This recipe yields 6-7 dozen meatballs
- 1 lb ground beef
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 cup flake coconut
- 1/2 small clove garlic, crushed
- 1 egg

1. Place fruits and lemon peel in a 2 1/2 quart pitcher
- cherries, blackberries and black grapes
- 1 strip of peel from a whole lemon
- 1/2 cup strongly brewed black tea
- 1 bottle dry red wine
- chilled club soda to taste

1. Place the roasted chiles in a bowl and cover with water
- 3 dried chipotle chiles, roasted
- 1 oz white onion, thinly sliced
- 2 garlic cloves, peeled
- 1/4 cup peanuts, peeled and chopped
- 1/2 lb ripe tomatoes
- 1/4 tsp freshly ground cinnamon
- 1/8 tsp freshly ground clove
- 1/4 tsp freshly ground marjoram

- 2 large chicken breasts, with skin, bone-in
- 1 large white onion, chopped
- 2 cups celery, chopped
- 2 cups carrots, chopped
- 4 cloves garlic, minced
- 5 cubes chicken bouillion
- 1 tbsp Italian seasoning
- 1/2 bag pasta, Acinidipepe or Orzo
- Chicken broth
Ham - Sticky Glazed Asian Ham

1. Fresh ham joints can be very salty, so it's best to soak it in cold water overnight
- Sticky Glaze:
- fresh ham joint (5 1/2 ham off the bone)
- 1 small handful of black peppercorns
- 2 bay leaves
- 1/2 in piece of fresh ginger, finely grated
- 1 star anise
- 1 large handful of cloves
- 2 cloves garlic, peeled, crushed and squashed
- zest and juice of 1/2 orange
- 2/3 cup honey
- 1 3/4 cups light brown sugar, solidly packed
- 1 red chili, seeded and finely chopped (optional)
- 1 tsp chinese five spice
- 1/2 cup soy sauce
- salt and freshly ground pepper
