Paleo Chocolate Cherry Coconut Bark

Since dry cherries are used, you can essentially make this bark with ANY dried fruit. I have done it with dried oranges, pineapple and apricots so far and they are all delicious. Add as much fruit and chocolate that you want to the recipe.

    tsp pure vanilla extract

  • 1/8

    tsp pure almond extract

  • 2

Tbsp chopped, dried unsweetened cherries (or as much as you like)

  • 1

Tbsp mini chocolate chips or dark chocolate shavings (or as much as you like)

  • pinch sea salt

  • for color, few drops of beet juice

  • You can also use different flavored extracts to help flavor the coconut oil (I use 1-2 tsp cherry extract in this recipe to help flavor)

Directions

1. Place all of the ingredients in a medium bowl and mix to combine. 2. Pour the mixture onto a parchment lined baking sheet and spread evenly with a spoon. 3. Freeze until hard. Break into pieces. Store in an airtight container and freeze for up to 1 month.
