Pumpkin Pie Bars

Makes one 9x13 inch pan
- 1/4 cup dark brown sugar
- 1/2 cup granulated sugar
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger
- 1/4 tsp ground cardamom
- 1/4 tsp salt
- 2 large eggs
- one 15oz can pure pumpkin puree OR pure pumpkin
- one 12oz can evaporated milk
- Baked Press-In Crust (recipe is in my collection)
- Creme fraiche or whipped cream, for serving
Spicy Slaw for Fish Tacos

Stir all of the ingredients together in a small bowl
- 2 cups finely shredded green cabbage
- 1/3 cup julienned radishes
- 1/4 cup finely sliced white or green onion
- 1/4 small serrano chile, minced
- 1/4 tsp salt
- 2 Tbsp fresh squeezed lime juice
Brussels Sprouts Braised with Bacon and Hard Apple Cider

1. Heat a large cast iron skillet over medium high heat
- 3 strips bacon, cut crosswise into 1/2 inch strips
- 2 Tbsp butter
- 1 1/2 lb brussels sprouts, trimmed and halved
- 2 large shallots, roughly chopped
- 1 cup hard apple cider
- 1 tsp honey
- 1 tsp kosher salt
- fresh ground pepper to taste
Mandarin Chicken

This is a Paleo recipe. You can use the oil of your choice and soy sauce if you are not Paleo
- Sauce: 1/2 cup frozen orange juice concentrate, thawed
- zest of 1 orange
- 2 Tbsp liquid aminos OR soy sauce
- 1 Tbsp olive oil
- 2 garlic cloves, minced
- 1 Tbsp raw honey
- 1/4 tsp red chili pepper flakes
- Chicken: 1 Tbsp coconut oil, OR oil of your choice
- 2 lbs boneless, skinless chicken thighs, cut into bite size pieces
- sea salt and fresh ground pepper to taste
- 1/2 tsp granulated onion
- Diced green onions sesame seeds (toppings for finished chicken)
Brisket with Sweet and Sour Onions

Preheat oven to 300 degrees
- One 5 lb brisket, preferably first cut
- Kosher salt and pepper
- 4 onions, sliced into 1/4 inch thick rings
- 1/4 cup ketchup
- 2 Tbsp tomato paste
- 1 Tbsp soy sauce
- 1 Tbsp dark brown sugar
- 4 garlic cloves, minced
- small cilantro sprigs, for garnish

- 1/4 cup coconut oil, melted
- 1 egg
- 1/3 cup honey
- 1/2 tsp vanilla extract
- 2 cup almond flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 cup chocolate chips
Lettuce Wraps w/Asian Chicken

1. In a small bowl, combine the hoisin sauce and soy sauce with 1/3 cup water
- 1/4 cup hoisin sauce
- 1 Tbsp soy sauce
- 2 Tbsp grape seed or veg oil
- 1 lb ground chicken or turkey
- 1 large carrot, peeled and finely diced
- 3 cloves garlic, finely chopped
- 4 scallions, whites and greens separated and chopped
- 1 large head butter lettuce, leaves separated *can use iceberg lettuce

- 1/4 cup brown sugar

- 1/2 tsp vanilla
- 1 cup all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips
- 1 cup coconut
Buffalo Chicken Calzones

Calzones with a Buffalo chicken - cheesy twist! I know, it sounds delicious
- 1/2 cup Buffalo sauce, preferably Frank's RedHot
- 2 tablespoons unsalted butter
- 1 pound rotisserie chicken, shredded (4-cups)
- 1 pound pizza dough, halved
- 1 cup Monterey Jack, shredded (4-ounces)
- Extra virgin olive oil, for brushing
- Flaky sea salt and coarse black pepper, to taste
- Blue Cheese dressing and celery, for serving
