Cheesy Hashbrown Casserole

Peel potatoes and boil for 30 minutes, until just tender
- Topping:
- 12 large potatoes or 1 (32 oz) bag frozen shredded hashbrowns
- 2 (10 3/4 oz) cans cream of chicken soup (reduced fat is fine)
- 2 cups sour cream (light is fine)
- 1 cup grated cheddar cheese
- 1/2 cup butter, melted
- 1/3 cup chopped onions
- 2 cups crushed corn flakes
- 2 Tbsp butter, melted
Chinese Five Spice Chicken

Combine all ingredients except chicken, and use as marinade
- 3 lbs chicken breast
- 1/3 cup soy sauce
- 1/4 cup oil, such as light olive oil or peanut oil
- 1 teaspoon garlic powder (or two garlic cloves, pressed)

- 1 teaspoon grated fresh ginger

Garlic Parmesan Crusted Chicken

- 1 onion, medium, chopped
- 2 zucchini, medium, diced
- 28 oz. vegetable broth, can also use chicken broth
- 28 oz. crushed tomatoes -- undrained
- 15 1/2 oz. great northern beans -- rinsed and drained
- 2 Tbsp dried Italian Seasoning
- 2 Tbsp Pesto
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 8 oz. uncooked cheese-filled tortellini
