Cheesy Greek-Style Baked Quinoa

Prepare the quinoa as directed
- 2 1/2 cups Cooked Quinoa
- 1 1/4 cup Fat Free Feta Cheese
- 1/2 cup Reduced Fat Shredded Mozzarella or Cheddar
- 1 cup Marinated Artichoke Hearts (in Oil)
- 1 cup Chopped Spinach
- 1 cup Diced Cherry Tomatoes
- 1/2 cup Skim Milk
- 1 tsp Crushed or Minced Garlic
- 1 tsp Lemon Juice
- 1 tsp Parsley
- 1 tsp Onion Powder
- 1/4 tsp Sea Salt & Coarse Black Peppercorn - approx.
Sweet Potato Turkey Shepherds Pie

Boil sweet potatoes and garlic in a pot of salted water until cooked and soft
- For the potatoes:
- 1-1/2 lbs sweet potatoes, peeled, diced
- 3 cloves garlic
- 1/2 cup 1% milk
- 1/4 cup fat free chicken broth*
- 2 tbsp reduced fat sour cream
- salt and pepper to taste
- For the filling:
- 1 lb 93% lean ground turkey
- 1 tsp olive oil
- 1 medium onion, diced
- 1 celery stalk, chopped
- 1 parsnip, diced
- 2 cloves garlic, diced
- 8 oz mushrooms, diced
- 10 oz frozen mixed vegetables
- 2 tbsp flour (leave out to make gluten-free)
- 1 cup fat-free low-sodium chicken broth*
- 2 tsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp freshly chopped rosemary
- salt and pepper
- paprika
Easy Cheese Danish

Preheat oven to 350* degrees and grease a 13X9-inch baking pan
- Ingredients:
- 2 cans ready to use refrigerated crescent rolls
- 2 8-ounce packages cream cheese
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1 egg white
- Glaze:
- 1/2 cup powdered sugar
- 2 Tablespoons milk
- 1/2 teaspoon vanilla extract
Easy Baked Honey Mustard Chicken

In a small bowl, combine the mustards, honey, and 2 teaspoons of the olive oil
- 1/4 cup of grainy, course mustard
- 1/4 cup smooth dijion mustard
- 1/2 cup honey (I love Bee Raw Honey)
- 3 teaspoons extra virgin olive oil
- 1/2 of a small yellow onion, diced
- 2 cloves garlic, minced
- 2 1/2 pounds boneless skinless chicken tenderloins

- 3 - 4 small sprigs of fresh rosemary
Easy Honey Pecan Baked Brie Dip

Place the chopped brie in a microwave safe dish (allow about two inches between the cheese and the rim of the dish)
- 1 cup chopped Brie (leave the rind on and just chop it up any which way!)
- 1/4 cup honey
- 2 tablespoons chopped pecans
- 1 teaspoon cinnamon sugar + more for sprinkling on dippers
- 1 unbaked Pillsbury pie crust
Butter-Pecan Sweet Potatoes
