Turkey Corn Chowder

Place diced potatoes in a large stockpot
- 4 potatoes, diced
- 1 medium onion, diced
- 2 tablespoons butter
- 2 cloves garlic, diced
- 1 (4 oz) can diced green chilis
- 2 cups half-and-half (fat-free is fine or you can use milk, but it won't be as creamy)
- 1 (14 oz) can chicken broth
- 1 (10.75 oz) can cream of chicken soup (I used reduced fat)
- 1 (15 oz) can corn, undrained
- 3-4 cups turkey, cooked and cut into bite-sized pieces
- 1 teaspoon seasoned salt
- 1/2 teaspoon garlic powder

Chicken Eugene

Broccoli Cheddar Soup

Comfort in a bowl. That is what this soup should be called
- 1/4 cup butter
- 1/2 chopped onion
- 1 clove garlic
- 1/4 cup flour
- 1 cup half-and-half
- 1 cup milk
- 2 cups chicken stock (I used bouillon cubes + boiling water)
- 1/2 lb fresh broccoli, chopped
- 1 cup carrot, shredded and chopped
- 1/4 tsp nutmeg
- 1/4 tsp cardamom
- 8 ounces grated sharp cheddar cheese
- 4 ounces grated Colby jack cheese (I used Velveeta)
- Salt and pepper to taste
