LEMON CRUMB BARS

Preheat oven to 350 degrees In a large bowl, beat the cake mix, butter and 1 egg until crumbly
- 1 package (18-1/4 ounce) lemon or yellow cake mix (regular size)
- 1/2 cup butter, (softened)
- 1 egg plus 3 egg yolks
- 2 cups finely crushed saltines (about 60 crackers)
- 1 can (14 ounces) sweetened condensed milk (not evaporated milk)
- 1/2 cup lemon juice from concentrate
Envelope Roast

Preheat oven to 375 degrees Mix together shortening, brown sugar, egg yolk and vanilla
- 1/2 cup soft shortening (half butter)
- 1/4 cup brown sugar
- 1 egg yolk (save egg whites)
- 1/2 teaspoon vanilla
- 1 cup flour
- 1/4 teaspoon salt
- 3/4 cup chopped nuts
SKIRT STEAKS WITH RED CHILE SAUCE AND CREAMY ROMAINE SLAW

In a medium saucepan combine the dried chiles with enough cold water to cover them generously
- Salad
- 4 large dried guajillo or New Mexico chiles, 1 to 1-1/4 ounces total, stemmed and seeded
- 6 cups thinly sliced romaine lettuce
- 1 cup thinly sliced radishes
- 1 cup loosely packed fresh cilantro leaves
- 1 cup thinly sliced red onion
- 1/4 cup sliced, pickled jalapeño chile peppers (from a jar), roughly chopped, plus 1/4 cup of the pickling liquid for the dressing
- 5 ounces coarsely crumbled feta cheese (about 1 cup)
- Dressing
- 6 tablespoons sour cream or crema mexicana
- 5 tablespoons mayonnaise
- Freshly ground black pepper
- Vegetable oil
- 1 teaspoon ground cumin
- Kosher salt
- 2 pounds skirt steak, 1/4 to 1/2 inch thick, trimmed of excess surface fat, cut crosswise into 6-inch pieces
PECAN TASSIES

Pastry: Let cream cheese and shortening soften at room temperature; blend

- 1 (3 oz.) package (Philadelphia) cream cheese
- 1/2 cup butter or margarine
- Filling:
- 1 cup sifted enriched flour
- 2 eggs
- 3/4 cup light brown sugar
- 1 Tablespoon soft butter or margarine
- 1 teaspoon vanilla
- Dash of salt
- 2/3 cup coarsely broken pecans (I use walnuts - I grind the walnuts)
OREO PUDDING COOKIES

- 1 cup butter, at room temp
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1 (4.2 oz.) package instant Oreo Pudding Mix - (not at every grocery store but I did find it at Wal-Mart and Target)
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 2 eggs
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 2 Hershey's Cookies N' Cream Candy Bars broken into small pieces (I used 2.6 King Sized bars)
- 2 cups semi-sweet chocolate chips
PEANUT BUTTER BON BON'S

In large bowl stir together cereal, peanut butter, graham crumbs and powdered sugar
- 1 1/2 cups rice crispies
- 1 1/4 cups crunchy peanut butter
- 1 cup crushed grahm cracker crumbs
- 1/2 cup powdered sugar
- white or dark chocolate almond bark or chocolate
