CARAMEL CORN WITH SMOKED ALMONDS AND FLEUR DE SEL

- Nonstick vegetable-oil spray
- 1 cup popcorn kernels
- 1 Tablespoon canola oil
- 2 teaspoons coarse kosher salt
- 1/2 cup light corn syrup
- 2 3/4 cups sugar
- 1/2 Tablespoon baking soda
- 8 Tablespoons (1 stick) unsalted butter, cut into small pieces
- 2 cups (about 8 ounces) smoked or regular Marcona almonds, coarsely chopped*
- 1 1/2 tablespoons fleur de sel (sea salt)
- Marcona almonds are tender Spanish nuts that are usually roasted and salted. They're available at specialty foods stores and some supermarkets.
HEARTY BACON AND BLACK BEAN SOUP

In Dutch oven or a large pan, cook bacon over medium-high heat until crisp
- 1 package (1 pound) hickory smoked thick sliced bacon
- 1 medium onion- chopped
- 1 green pepper- chopped
- 2 (14 1/2oz) cans or 1 (32oz) carton of chicken broth
- 1 (5 1/2oz) can of vegetable juice cocktail
- 1 (10oz) can of chopped tomatoes and green chilies (rotel)
- 1 (11oz) can of corn with green and red bell peppers- drained
- 2 (15 1/2oz) cans of black beans- rinsed and drained
- shredded cheddar cheese (optional)
- sour cream (optional)
SCOTCH SHORTBREAD COOKIES

Mix all ingredients together
- 1 cup butter
- 1/2 cup powdered sugar
- 2 cups flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
OREO BALLS (MOOSE DROPPINGS)

Add oreos to food processor and blend until fine
- 1 (18oz.) package oreo cookies (regular size)
- 1 (8oz.) package cream cheese (room temperature)
- 1 or 2 packages white chocolate almond bark
COOKIES AND CREAM POPCORN

In a large pot with a lid, heat the vegetable oil and popcorn kernels over medium heat
- 2 Tablespoons vegetable oil
- 1/2 cup popcorn kernels
- 16 oreo cookies
- 9 ounces white chocolate
- 1/4 cup rainbow sprinkles
STRAWBERRY COOKIES

Melt oleo and put in sugar and eggs
- 2 eggs beaten
- 1/2 cup oleo
- 1 cup sugar
- 1 1/2 cup chopped dates
- 1/2 cup flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 2 1/2 cup rice krispies
- 1 cup nuts
- red sugar
BARBECUE BACON PARTY SPREAD

Spread cream cheese onto platter
- 2 packages (8 oz. each) cream cheese, softened
- 1/2 cup barbecue sauce
- 1 package fully cooked bacon, chopped
- 1 small tomato, chopped
- 1/2 cup chopped green peppers
- 3 green onions, sliced
- 1 cup shredded cheddar cheese
POTATO HASH WITH ROSEMARY

Stir ingredients together in a lightly greased non-stick skillet
- 1 large baking potato, peeled and cubed
- 1 large sweet potato, peeled and cubed
- 1/4 cup chopped onion
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh rosemary
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground pepper
WHITE CHILI

Sauté onions in oil until transparent
- 2 med. onions- chopped
- 1 Tbls. oil
- 4 cloves garlic- minced
- 2 (4oz) cans of chopped green chilies
- 2 tsp. ground cumin
- 1 tsp. dried oregano
- 1/4 tsp. cayenne pepper
- 2 (14 1/2oz) cans of chicken broth
- 4 cups cooked chicken- cubed (or shredded)
- 3 (15 1/2oz) cans of great northern beans- rinsed & drained
- 2 cups shredded Monterey jack cheese
- sour cream- optional
- sliced jalapenos- optional
COCONUT DIAMOND

Preheat oven to 350 degrees Cream together butter, 1/4 cup sugar, and 1/4 teaspoon salt
- 6 Tablespoon butter, (softened)
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1 cup flour
- 2 eggs
- 1 teaspoon vanilla
- 1 cup brown sugar
- 2 Tablespoon flour
- 1/2 teaspoon salt
- 1 cup flaked coconut
- 1/2 cup chopped nuts
