Roast Chicken with Garlic, Lemon and Parsley

To prepare marinade, combine all marinade ingredients in a food processor; process to a paste
- Marinade:
- 1 C flat leaf Parlsey
- 2 Garlic cloves
- 2 Shallots
- 1 TBSP Black Pepper
- 3 TBSP Olive Oil
- 1.5 TBSP Dijon Mustard
- 1.5 tsp Dried Herbes de Provence
- 1/2 tsp Dried Rosemary
- 1 tsp grated Lemon rind
- Chicken:
- 1 ) 3 lb Chicken
- 1/2 tsp Salt
- Black Pepper
- 1/2 head Garlic ~ unpeeled
- 1/2 C low-sodium Chicken Broth
- 2 TBSP Lemon Juice

- 1 LOAF BREAD- CUBED & TOASTED
- 3 POTATOES - DICED & COOKED
- 1 1/2 C. CELERY - DICED & COOKED
- 1 1/2 C. CARROTS - DICED & COOKED
- 1/2 ONION - DICED
- 1 1/2 C. COOKED CHICKEN BITS
- 1 STICK MELTED MARGARINE W/ 1 TBSP
- CHICKEN BASE
- 6 EGGS - BEATEN W/ 2 CUPS OF MILK
- 2 CUPS CHICKEN BROTH
- 1 TBSP PARSLEY FLAKES, SALT & PEPPER
- 1/2 TBSP GARLIC POWDER
Barb's Bacon Cheddar Cauliflower Chowder

- 1/2 Cup Onion - diced
- 1/2 Cup Celery - chopped
- 2 Garlic cloves - minced
- Salt and Pepper to taste
- 4 Cups Cauliflower - grated or riced ( approx 1 medium head )
- 2 TBSP Water
- 2 oz. Reduced-Fat Cream Cheese
- 1/4 Cup Regular Half and Half
- 3 Cups Chicken Broth
- 3-4 dashes Hot Sauce (to taste)
- 2 Cups Reduced Fat Shredded Sharp Cheddar Cheese
- 2 Green Onions - chopped (optional)

King Ranch Cauliflower Casserole - S

- 2 cups soy sauce
- 1 cup water
- 1/2 cup light brown sugar, packed
- 1 tbs. dark molasses
- 1 tsp. salt
- 5 pounds meaty pork ribs ( Country Style or Baby Back )
- Marinade #2
- 1/3 cup water
- 1 14 oz. bottle ketchup
- 1 12 oz. bottle chili sauce
- 1/2 cup light brown sugar, packed
- 1 tsp. dried mustard
Crunchy Napa Cabbage Asian Slaw

Instructions: Thinly slice Napa cabbage, then coarsely chop to make 3-4 cups shredded cabbage
- Ingredients:
- 1 small head Napa cabbage, thinly sliced then coarsely chopped (about 3-4 cups shredded cabbage)
- 1 C thinly and diagonally-sliced sugar snap peas
- 1 C radishes, sliced into half-moon shapes
- 1/2 cup sliced green onion
- 1/2 - 3/4 cup chopped cilantro (optional, but if you're a cilantro fan I would use it)
- 1/2 cup sliced almonds, toasted ( use only if in maintenance )
- Dressing Ingredients:
- 1 T white wine vinegar
- 1 T Splenda, Stevia in the Raw, or sugar
- 1 tsp. soy sauce
- 1/2 tsp. crushed garlic puree
- 1/4 tsp. Asian sesame oil
- 1/4 tsp. ground ginger puree
- 1/4 tsp. (or more) Sriracha sauce
- 1/3 cup light mayo
Tortilla Relish

Combine garlic, onion, oregano, lemon juice, oil, and vinegar in a shallow dish, like a pie plate
- 1 1/2 cups corn, frozen works well or cut kernels from grilled or boiled corn on the cob
- 1 1/2 cups sliced black olives
- 1 1/2 cups chopped red pepper
- 4 tablespoons diced onion
- 4 grated garlic cloves
- 2 teaspoons oregano
- 4 tablespoons lemon juice
- 6 tablespoons olive oil
- 2/3 cups apple cider vinegar
- salt and pepper to taste (optional)
- 4 chopped avocados
- Note- Sometimes I substitute tomato for the red pepper or use half tomato and half red pepper.
