Creamy, Dreamy, Spinach, Onion, and Bacon Dip

Preheat oven to 350°F. Combine all ingredients except corn chips in a medium bowl
- 1 pound bacon, cooked and crumbled
- 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 (10-ounce) package frozen chopped onions, thawed and squeezed dry
- 3 (8-ounce) packages cream cheese, softened
- 1 (5-ounce) package shredded Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup mayonnaise
- Corn chips

1. To prepare basting liquid, combine first 10 ingredients in a saucepan
- Basting liquid:
- 1/4 cup extra-virgin olive oil
- 2 tablespoons grated fresh onion $
- 1 tablespoon chopped fresh thyme
- 1 tablespoon sugar $
- 1 tablespoon grated garlic $
- 1 teaspoon unsalted butter
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon kosher salt
- 1/4 teaspoon crushed red pepper
- Remaining ingredients:
- Basic Brine (see below)
- 8 bone-in chicken thighs, each sliced to the bone in a few places
- 2 (15 x 6 1/2 x 3/8-inch) cedar grilling planks
- 1 bunch thyme sprigs
- 1 bunch rosemary sprigs
- 1 bunch sage sprigs
- 2 tablespoons white wine vinegar
- 1 tablespoon fresh lemon juice $
- 2 tablespoons finely chopped fresh flat-leaf parsley
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon kosher salt
- 1 tablespoon chopped fresh tarragon
Stuffed Butternut Squash

Preheat oven to 350. Cut squash in half, lengthwise and remove seeds
- 1 butternut squash, medium size
- 1/2 cup cold water
- 1 cup chopped apples, unpeeled
- 1/4 cup fresh chopped onion
- 2 teaspoons butter melted
- 1/2 cup low fat cottage cheese
- 1/4 teaspoon salt or to taste
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground ginger
- 1/8 teaspoon black pepper
- 1/2 teaspoon apple pie spice

- 5 cups buttermilk, divided
- 1/3 cup plus 1 teaspoon kosher salt, divided
- 2 tablespoons sugar
- 5 pounds bone-in chicken pieces
- Vegetable oil, for frying
- 2 1/2 cups all-purpose flour

Chicken-Garlic Sausage, Kale, and Mozzarella Egg Bake

- 4 links (12 oz. total) reduced-fat pre-cooked chicken-garlic sausage
- 1 tsp. + 1 tsp. olive oil
- 4 cups (packed) baby kale leaves (or you can use thinly sliced regular kale)
- 1/2 cup thinly sliced green onions (optional)
- 1 cup grated low-fat mozzarella
- 8 eggs, beaten
- 1 tsp. Spike Seasoning (more or less to taste, or use any type of all-purpose seasoning blend)
- fresh ground black pepper to taste
- low-fat sour cream for serving (optional)

- 1 small onion, chopped
- 3 Tbsp Butter & 3 Tbsp Flour
- 1 ) 14 oz can Chicken Broth
- 1 C. Milk
- 1 1/2 C. Shred Monterey jack Cheese
