Barb's Bacon Cheddar Cauliflower Chowder

Ingredients

  • 8 slices of turkey bacon
  • 1/2 Cup Onion - diced
  • 1/2 Cup Celery - chopped
  • 2 Garlic cloves - minced
  • Salt and Pepper to taste
  • 4 Cups Cauliflower - grated or riced ( approx 1 medium head )
  • 2 TBSP Water
  • 2 oz. Reduced-Fat Cream Cheese
  • 1/4 Cup Regular Half and Half
  • 3 Cups Chicken Broth
  • 3-4 dashes Hot Sauce (to taste)
  • 2 Cups Reduced Fat Shredded Sharp Cheddar Cheese
  • 2 Green Onions - chopped (optional)
  • 1 TBSP Olive Oil

Preparation

Step 1

Prepare and cut bacon into small pieces and set aside.

Saute celery, onion & garlic cloves in Olive Oil until tender.
Add cauliflower and 2 TBSP water to pot. Cover and simmer 5 minutes.
Add chicken broth, hot sauce, bacon, 2 cups of shredded cheese, cream cheese and half n half.
Stir and simmer 20-25 minutes. Remove from heat.
Allow to cool and sprinkle cheddar cheese and green onions upon the top if desired.
