- for the sauce:
- 2 tablespoon rice vinegar
- 2 tablespoon sesame oil
- 4 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 2 teaspoon brown sugar
- 2 teaspoon garlic powder
- 2 teaspoon ground ginger
- for the ramen noodle stir fry:
- 5 packs of ramen noodles (discard the flavor packets)
- 2 tablespoon olive oil
- 1 clove garlic, minced
- 1 teaspoon ground ginger
- 3.5 ounces shiitake mushrooms, sliced
- 1 small head of broccoli, cut into florets
- 1 cup shredded carrots
- 1 tablespoon minced cilantro

Preheat the oven to 450 degrees
- 4 McIntosh apples
- 3 tablespoons fresh lemon juice
- 1/4 cup firmly packed light brown sugar
- 1/2 stick (1/4 cup) unsalted butter, cut into bits
- 2 tablespoons light rum
- 4 3-inch cinnamon sticks
Cauliflower, Cheesy, Better than Potatoes Puree (Low Carb)

- 1 head of cauliflower
- 2 Tbsp heavy cream
- 1 Tbsp butter
- 2 ounces dubliner or other sharp cheese

- 325 degrees
- 20-25 minutes
- 1/2 c sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/8 tsp allspice
- 2 cups nuts
- 1 TB egg white whisked
- add nuts to frothy egg white-
- transfer to sugar mixture
- bake on parchment lined pan.
- Separate nuts
- Bake
- Cool on rack

- 1 cup Parmigiano-Reggiano cheese, grated
- 1 cup panko breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 2 shallots, minced
- 1 tbsp. olive oil
- Salt and pepper
- 2 cups Fabio’s Tomato Sauce (see recipe on page 18)
- Fresh parsley, chopped, for garnish
- Extra-virgin olive oil, for drizzling
- TIP: Don’t waste ex-pensive cuts of meat on meatballs! If prepared correctly, a cheaper cut of meat like beef shoulder/chuck, or even scraps will work perfectly.

In a large mixing bowl, whisk together the French Toast “Batter” Ingredients except for the peaches
- 1 loaf 2 day-old French bread, cut into 1/2” cubes (about 13 cups)*

- 3/4 cup milk**
- 3/4 cup heavy cream**
- 1/2 cup granulated sugar
- 2 tablespoons pure maple syrup
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon orange extract
- 1/8 teaspoon salt
- 1 15 oz. can peach halves in JUICE, chopped
- Cinnamon Streusel Topping
- 1/3 cup packed light brown sugar
- 1/2 cup all purpose flour
- 1/2 teaspoon ground cinnamon
- 4 tablespoons butter, chilled and roughly chopped
- Cream
- 1 1/4 cups heavy whipping cream
- 2 1/2 tablespoons powdered sugar
- 1/2 teaspoon vanilla
- Garnish (highly recommended)
