- Pumpkin Latte Cupcakes:
- 1 box Pillsbury® Perfectly Pumpkin Cake Mix
- 2 tsp. cinnamon
- 1/2 C. melted butter, cooled
- 3 eggs
- 1/2 C. milk
- 1/2 C. sour cream
- 2 tsp. vanilla extract
- 1/4 C. strong coffee*
- Cream Cheese Frosting:
- 8 oz. cream cheese
- 1/2 C. butter, room temperature
- 2 tsp. vanilla extract
- 4-5 C. powdered sugar
- Caramel and straws for decoration
- note: 1/4 C. hot water and 5 tsp. instant coffee granules
