Ingredients

  • 1

    cup firmly packed golden

  • brown sugar

  • 1/2

    cup (1 stick) butter

  • or margarine, softened

  • 1

    tablespoon orange rind,

  • grated

  • 1

    egg

  • 1

    teaspoon vanilla extract

  • 2

    cups all-purpose flour

  • 2

    teaspoons baking powder

  • dash of salt

Directions

Preheat oven to 350°F. Grease cookie sheets. Beat brown sugar and butter in large mixing bowl until light and fluffy. Add orange rind, egg and vanilla; beat until creamy. Stir together flour, baking powder and salt; gradually add to sugar mixture. On well-floured surface, roll out 1/2 dough at a time to 1/8-inch thickness. Cut into shapes with floured cookie cutters. Bake on prepared cookie sheets 12-15 minutes. Cool on wire rack.
