Applebee's Santa Fe Stuffed Chicken

Cut some of the cheese into 8 slices, and reserve part of it for the cheese sauce
- 8 skinless, boneless chicken breasts
- 1 (8 oz. or larger) package Monterey jack cheese,
- 1/2 C. butter, melted
- 1 C. Italian seasoned bread crumbs
- 1 1/2 Tbs. grated Parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. ground cumin
- 1/2 tsp. ground black pepper
- 1 small red bell pepper
- 1 small green bell pepper

- 3 pkg Lemon Instant Pudding (3.4 oz size)- the small boxes
- 2 cup Milk, divided
- 1 tbsp. fresh Lemon Juice
- 8 oz. Frozen Whipped Topping, thawed
