Black Forest Dream Bars

Heat oven to 350°F. Lightly spray bottom and sides of 13x9-inch pan with cooking spray
- 1 pouch (1 lb 1.5 oz) Betty Crocker® double chocolate chunk cookie mix
- 1/4 cup vegetable oil
- 1 egg
- 1 can (21 oz) cherry pie filling
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup sugar
- 1 container (8 oz) frozen whipped topping, thawed
Chicken Salad Bake

- 2 cups chopped cooked chicken
- 2 ribs celery, chopped
- 1 small onion, finely chopped
- 1 (2-ounce) jar chopped pimientos

Potato Cheese Soup with Ham

Melt butter in a large saucepan over medium heat
- 2 tablespoons butter
- 4 ounces lean ham, chopped
- 1 cup chopped onion
- 1 cup chopped carrot
- 8 cups peeled and coarsely chopped potatoes (russets or Yukon golds, about 3 pounds)
- 3 cups reduced-sodium chicken broth or water
- 1 cup beer
- 3/4 cup (3 ounces)grated Gruyère cheese
- 3/4 cup (3 ounces) grated Cheddar cheese
- 1/2 cup 2 percent reduced-fat milk
Beef Nacho Casserole

Heat oven to 375 degrees
- 2 tablespoons olive oil
- 1/4 pound pre-sliced sweet red peppers (about 1/2-inch-wide strips )
- 1/4 pound pre-sliced sweet yellow peppers (about 1/2-inch-wide strips)
- 1 pound lean ground beef
- 1/2 teaspoon garlic salt
- 2 tubes (10 ounces each) refrigerated pizza dough
- 3 cups shredded taco-cheese blend
- 1 jar (16 ounces) medium-hot salsa
- 1 can (2.2 ounces) sliced black olives, drained (about 1/4 cup)
- 3 large scallions, trimmed and sliced
Korean Beef Stir-Fry

Combine mirin,soy sauce and cornstarch in a small bowl
- 3 tablespoons mirin, (see Note)
- 2 tablespoons reduced-sodium soy sauce
- 2 teaspoons cornstarch
- 1 tablespoon canola oil
- 8 ounces flank steak, trimmed of fat and very thinly sliced against the grain (see Tip)
- 1 tablespoon chopped garlic
- 2 teaspoons chopped jalapeno pepper, or to taste
- 1 1/2 teaspoons chopped fresh ginger
- 4 cups mung bean sprouts
- 1 6 ounce bag baby spinach
- 1/4 cup chopped fresh cilantro
- 1 teaspoon toasted sesame oil
- 2 tablespoons toasted sesame seeds, (see Tip), optional

Heat 1 tbsp smart balance butter in a large pan on medium heat
- 6 boneless, skinless organic chicken breasts
- 1 bottle your favorite barbecue sauce (I pick one lower in sugar & without high fructose corn syrup)
- 1/2 green pepper chopped fine
- 1/2 large sweet onion, chopped fine
- 2 cloves fresh garlic, minced
- 1 (15.5oz) can crushed pineapple, drained
- 2 tbsp smart balance butter stick
- Non-stick cooking spray
Creamy Scalloped Potatoes with Ham

In a large saucepan, melt butter over medium low heat; add celery, green onions, carrots, and ham
- 3 pounds peeled potatoes, thinly sliced with a mandoline or sharp knife, about 6 to 8 cups
- 5 tablespoons butter or margarine
- 3/4 cup chopped celery
- 9 green onions, with 3 inches of green top, or 1 small leek, white and light green part - chopped
- 3/4 cup chopped carrots
- 2 cups diced cooked ham - I used 1 pound Boar’s Head ‘Sweet Slice’ ham cut it into 2, 1/2-inch slices at the deli counter, which I diced into 1/2 pieces
- 5 tablespoons flour
- 2-1/2 to 3 cups milk
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
- 1-1/2 cups shredded white cheddar cheese
Old Fashioned Southern Chocolate Cake

CAKE: Preheat oven to 350 degrees F
- 2 2 2 cups all-purpose flour
- 1/4 1/4 1/4 cup unsweetened cocoa
- 1 1 1 teaspoon baking soda
- One One eighth teaspoon salt
- 1 1 1 cup sugar
- 1/2 1/2 1/2 cup vegetable shortening
- 1/4 1/4 1/4 cup (1/2 stick) butter, softened
- 4 4 4 eggs
- 1 1 1 cup buttermilk
- 2 2 2 teaspoons vanilla extract
- OLD FASHIONED SOUTHERN CHOCOLATE FROSTING (see below)
- 1/4 1/4 1/4 cup (1/2 stick) butter
- 1 1 can 1 (5-ounce) can evaporated milk
- 1/4 1/4 1/4 cup granulated sugar
- 2 2 squares 2 (1-ounce) squares unsweetened chocolate
- 1 1/4 1 1/4 1/4 cups confectioners' sugar
- 1 1 1 teaspoon vanilla extract
- 30 to heat and add confectioners' sugar and vanilla; mix well. Chill 30 minutes to thicken before using.
