Crustless Coconut Pie

Beat the eggs with an electric mixer until very frothy
- Lightly grease two shallow 9″ pie plates. Preheat oven to 350 degrees F.
- 4 eggs
- 1 & 3/4 cups sugar
- In a two cup glass measuring cup: add the juice of one large fresh lemon + enough milk added to it to make 2 cups milk
- 1/4 cup butter, melted
- 1/2 cup self-rising flour
- 1/8 teaspoon baking soda
- 1 teaspoon vanilla
- 1 teaspoon lemon extract
- zest of one large fresh lemon
- 1 cup Baker’s sweetened flaked coconut, divided
Blueberry Streusel Coffee Cake

Preheat oven to 350 degrees
- Streusel
- 1/2 cup flour
- 1/2 cup packed brown sugar
- 3/4 teaspoon cinnamon
- 4 tbsp butter, melted
- Coffee Cake
- 1/2 cup sugar
- 6 tbsp salted butter, room temperature
- 1/4 cup sour cream
- 1/4 cup milk
- 1 egg
- 1 tsp vanilla extract
- 1 1/4 tsp baking powder
- 1 cup all-purpose flour
- 1 1/4 cups blueberries
- Glaze
- 3/4 cup powdered sugar
- 1-2 tbsp milk
Overnight French Toast

In a small bowl combine brown sugar and melted butter and pour on the bottom of a 9x13 baking dish
- 1/4 cup (4 tablespoons) butter, melted
- 3/4 cup packed light brown sugar
- 1 loaf brioche or challah (a French bread loaf can a used) sliced into 1 1/2 inches thick slices
- 8 eggs, slightly beaten
- 1 cup whole milk
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/2 cup pecans, measured then chopped
- 1/8 teaspoon salt
- Maple syrup and powdered sugar for topping (optional)
Dump Cake

Dump cherry pie filling and crushed pineapple into baking dish
- 1 can (21 Oz.) Cherry Pie Filling
- 1 can (15 Oz.) Crushed Pineapple
- 1 box (about 18 Oz.) Yellow Or White Cake Mix
- 1 stick Margarine
- 1/2 stick Butter
- Whipped Cream
Cauliflower Pepperoni Pizza

In a soup pot, place cauliflower; fill with just enough water to cover cauliflower
- 1 head cauliflower, trimmed and cut into florets
- 2 tablespoons light margarine
- 12 slices pepperoni, divided
- 1/2 cup shredded low-fat mozzarella cheese, divided
- 1/2 teaspoon dried oregano
- 1/8 teaspoon salt (optional)
- 1/8 teaspoon black pepper
Chocolate Saltine Toffee

Preheat the oven to 350F. Line a 9 x 11 pan or similar with aluminum foil and spray it very well with cooking spra...
- 30 to 40 saltine crackers (I have seen recipes call for 40 but I used about 32 crackers)
- 1 c butter (2 sticks)
- 1 c brown sugar, packed (I used half light and half dark because that’s what I had on hand and open)
- 1/2 tsp vanilla extract (some recipes I have seen do not call for it, but I recommend it)
- 1.5 to 2 c chocolate chips (I used one 12-ounce bag of TJ’s semi sweet morsels, also see optional note below)

- 2 2 2 cans (15 ounces each) cannellini beans, rinsed and drained
- 1/4 1/4 1/4 cup water
- 1/4 1/4 1/4 cup finely chopped roasted sweet red peppers
- 2 2 2 tablespoons finely chopped red onion
- 2 2 2 tablespoons olive oil
- 2 2 2 tablespoons lemon juice
- 1 1 1 tablespoon snipped fresh dill
- 2 2 2 garlic cloves, minced
- 1/4 1/4 1/4 teaspoon salt
- 1/4 1/4 1/4 teaspoon pepper
- 1 1 1 small cucumber, peeled, seeded and finely chopped
- 1/2 1/2 1/2 cup fat-free plain Greek yogurt
- Additional snipped fresh dill
