CHIPOTLE MARINADE

Combine all ingredients in small bowl
- 1/3 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 1 tablespoon packed brown sugar
- 2 teaspoons minced chipotle chilies in adobo sauce
- 2 tablespoons adobo sauce (from chilies)
- 2 cloves garlic, minced
- 1 teaspoon freshly grated lime peel
Impossibly Easy Mini Greek Burger Pies

Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray
- Burger Mixture
- 1 lb lean (at least 80%) ground beef or ground lamb
- 1 large onion, chopped (1 cup)
- 1/4 teaspoon red pepper flakes
- 1/2 cup diced roasted red bell peppers (from 16-oz jar)
- 1/2 cup feta cheese, crumbled (2 oz)
- Baking Mixture
- 1/2 cup Original Bisquick® mix
- 1/2 cup milk
- 2 eggs
Tangy Skillet Chicken

1.Add olive oil to a large, nonstick skillet and begin to heat over medium-high heat
- 4 teaspoons extra-virgin olive oil
- 1 tablespoon fresh or bottled garlic, minced
- 3 tablespoons Meyer lemon juice (or substitute regular lemon juice)
- 4 tablespoons water, or chicken broth or white wine
- 4 boneless, skinless chicken breast halves, (unfold the tenderloin area to make the breast as flat as possible)
- freshly ground black pepper
Slow Cooker Bacon Wrapped Apple BBQ Chicken

Wrap each chicken breast in 2 slices of bacon and place in a slow cooker
- 2 small boneless skinless chicken breasts
- 4 slices bacon
- 1/2 cup BBQ sauce store bought
- 2 large apples, peeled and cur into small pieces
- 2 tablespoons lemon juice
Amaretto Peach Cookie Cobbler

Preheat oven to 350ºF. Spread pie filling in bottom on 9x13-inch pan
- 2 (21-oz) can peach pie filling
- 2 cups fresh or frozen peach slices, thawed
- 1/2 tsp cinnamon
- 1/2 cup amaretto
- 1 (17-1/2 oz) package sugar cookie mix
- 1 cup sliced almonds
- 3/4 cup butter, melted
Jamaican Pork Stir-Fry

In a wok or large skillet heat oil over medium-high heat
- 2 tablespoons cooking oil
- 1-16 ounce package frozen stir-fry vegetables (carrots, snow peas, mushrooms, and onions)
- 12 ounces pork strips for stir frying
- 2-3 teaspoons Jamaican jerk seasoning
- 3/4 cup bottled plum sauce
- 2 cups hot cooked rice or pasta

Cheesy Creamed Spinach Casserole

This cheesy spinach casserole is the perfect side to compliment any meal
- 1 medium sweet onion
- 1 tablespoon cooking oil
- 1 (8-ounce) cream cheese, room temperature
- 1/2 cup half and half
- 2 (10-ounce) packages frozen chopped spinach, squeeze to remove as much water as possible.
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon nutmeg, fresh grated
- 1/2 teaspoon Kosher salt
- 1 cup sharp cheddar cheese, shredded, divided
- 1 cup Asiago cheese, shredded, divided
Rachel Ray's Jose's Chimichurri Burgers

Place chimichurri ingredients in a food processor and fine chop into a thick sauce
- For the Chimichurri:
- 3 tablespoons Worcestershire sauce
- 1/4 cup chopped red bell pepper
- 1 seeded serrano pepper
- 1/2 small yellow onion
- 2 cloves garlic
- 1/2 cup parsley and cilantro, packed
- 1 sprig oregano or marjoram or 1 teaspoon dried oregano
- 2 pounds ground beef or pork
- Salt and pepper
- For the Toppings and Fixings:
- 1 tablespoon canola or vegetable oil, plus some for drizzling
- 1 yellow onion, thinly sliced
- 1/2 pound white cabbage, cored and thinly sliced
- Salt and pepper
- 6 thick slices beefsteak tomato
- 1 cup mayonnaise/aioli, homemade* or store-bought
- 1/3 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1/4 cup sweet pickle relish
- 6 burger rolls, Club rolls or sweet Portuguese rolls, split
- Melted butter
- For the Mayo/Aioli:
- 1 egg yolk
- 1 rounded teaspoon Dijon mustard
- 1 tablespoon lemon juice

In a small bowl, combine broth, soy sauce, cornstarch, and ginger; mix well and set aside
- What You'll Need:
- 1/2 cup ready-to-use beef broth
- 3 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon ground ginger
- 2 tablespoons vegetable oil
- 1 to 1-1/2 pounds beef top or bottom round steak, cut into 1/4-inch strips
- 1 medium-sized red bell pepper, cut into 1/4-inch strips (see Options)
- 1/4 pound fresh mushrooms, sliced
- 3 scallions (green onions), sliced
