Garlic Rosemary Mashed Potatoes

1. Place potatoes in medium saucepan
- 2 lbs. russet or Idaho potatoes, peeled and quartered
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon rosemary leaves
- 1/4 teaspoon black pepper
- 1/2 cup milk
- 1/4 butter, cut into chunks
- 1 teaspoon parsley flakes
Chicken and Garlic Ravioli with Peppers and Sun-Dried Tomatoes

1. Cook and drain ravioli as directed on package
- 2 packages (9oz.) refrigerated chicken and roasted garlic-filled ravioli
- 1/2 cup julienne sun-dried tomatoes in oil and herbs (from 8oz. jar) drained, 2 tablespoons oil reserved
- 1 bag (1 lb) frozen bell pepper and onion stir-fry, thawed, drained
- 2 cups shredded provolone cheese (8oz.)
Italian Beef sandwhiches

1. In a 5 qt. slow cooker, layer the beef, pepperoncinis and onion; sprinkle with oregano and garlic salt
- 1 boneless beef sirloin tip roast (2 pounds), cut into 1/4 inch strips
- 2 jars (11-1/2 ounces each) sliced pepperoncinis, undrained
- 1 small onion, sliced and separated into rings
- 3 teaspoons dried oregano
- 1 and 1/2 teaspoons garlic salt
- 1 can (12oz.) beer or nonalcoholic beer
- 8 Hoagie buns, split
- 8 slices provolone cheese
- Mayonnaise - optional
Zucchini Bread

A favorite summertime recipe with zucchini fresh from the garden
- 2/3 shortening
- 2 and 2/3 cups of sugar
- 4 eggs
- 2/3 cup of water
- 3 and 1/3 cups of flour
- 2 teaspoons baking soda
- 1 and 1/2 teaspoons salt
- 1/2 teaspoon baking powder
- 1 teaspoon ground cloves
- 2 teaspoons vanilla
- 1 teaspoons ground cinnamon
- 3 cups shredded zucchini (about 2 medium zucchini)
- 2/3 cup coarsely chopped nuts (optional)
- (These ingredients can be cut in half for 1 loaf)
- 2/3 cup raisins (optional)
Beef and Broccoli Stir-Fry

1. In a small bowl, combine soy sauce, lemon juice, cornstarch, dark brown sugar, garlic and pepper
- 1/2 cup soy sauce
- 2 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon firmly packed dark brown sugar
- 1 clove garlic, crushed
- 1 teaspoon black pepper
- 2 tablespoon olive- oil divided
- 2 lb. top sirloin, sliced 1/4 inch thick
- 1 medium onion, thinly sliced
- 2 medium heads broccoli
- 2 teaspoon grated fresh gingeroot

- 1 can (10-1/2 ounces) condensed chicken with rice soup, undiluted
- 1-1/3 cups of water
- 1 cup salsa
- 1 cup canned pinto beans, rinsed and drained
- 1 cup canned black beans, rinsed and drained
- 1 cup frozen corn
- 1 cup frozen diced cooked chicken
- 1 teaspoon ground cumin
- Crushed tortilla chips, shredded cheddar cheese and sour cream
Cheddar Broccoli Chicken Skillet

1. Season chicken breasts with salt, 1/8 teaspoon of the black pepper and paprika
- 4 boneless, skinless chicken breast halves
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper, divided
- 1/8 teaspoon paprika
- 1 teaspoon canola oil or olive oil
- 1 and 3/4 cups milk
- 1 can (103/4 oz.) condensed cheddar cheese soup
- 2 cups fresh or frozen broccoli flowerets
- 2 cups instant long-grain white rice
- 1/2 cup (2oz.) shredded cheddar cheese or 1/4 (1 oz.) freshly grated Parmesan cheese
Hidden Valley Ranch Red Pepper dip

- 2 cups low fat sour cream
- 1 envelope Hidden Valley Ranch original ranch salad dressing mix
- 1/2 cup diced, bottled pimentos or red peppers, drained
