Making our own "fancy" ice cream

- Vanilla variations
- Banana pudding- Fold in coarsely mashed large banana, 1 cup crumbled vanilla wafers and 1 cup crumbled meringue cookies into vanilla ice cream
- Strawberry Shortcake- Mix 1 cup sliced strawberries with 2 tablespoons strawberry jam. Fold into vanilla ice cream along with 2 slices pound cake (about 1 and 1/2 cups crumbled) and 1 cup crumbled meringue cookies.
Chicken Pita Pockets

1. Place chicken between two sheets of plastic wrap and pound to flatten
- 4 boneless/skinless chicken breast
- 3/4 cup ranch salad dressing
- 1 tablespoon dried dill weed
- 2 tablespoons olive oil
- 1 cup sliced fresh mushrooms
- 1 cup thinly sliced sweet onion
- 1 cup torn Romaine lettuce
- 4 large pita bread loaves, halved

Light a medium hot grill. Place the asparagus on a sheet pan and toss with olive oil to coat evenly

Sensational Double layer Pumpkin Pie

Mix- cream cheese, 1 Tablespoon half and half and sugar with wire whisk until smooth
- 1 package Philadelphia Brand cream cheese, softened
- 1 cup plus 1 tablespoon cold half and half or milk
- 1 tablespoon sugar
- 1 and 1/2 cups thawed cool whip
- 2 packages (4-serving size) Jell-O Vanilla Flavor Instant Pudding and Pie Filling
- 1 can (16 oz.) pumpkin
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- Crust
- 7 graham rectangles, crushed
- 3 Tablespoons margarine
Chicken and Brussels Sprouts

1. Heat large covered saucepot of salted water to boiling on high
- 12 oz. cavatappi pasta
- 1 lb. boneless, skinless chicken thighs, cut into 1/2-in. chunks
- Salt and pepper
- 2 tsp. olive oil
- 10 oz. burssels sprouts, sliced
- 1/4 cup water
- 1 Tablespoon margarine or butter
- 1/4 teaspoon crushed red pepper
- 1/4 cup lain dried bread crumbs
- 3 clove garlic, crushed with press
- 1/4 cup grated Parmesan cheese
- 2 tablespoons finely chopped parsley
Peanut Butter Snowballs

- 1/2 cup butter or margarine
- 1 and 1/4 cups sugar
- 2 eggs
- 1 cup sour cream or plain yogurt
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups flour
- 2 cups blueberries, fresh or frozen

- 3 cups of quick-cooking oats
- 1 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon

- 3/4 chopped peeled tart apple
- 1/3 cup chopped fresh or frozen peaches

- 2 . 1 can( 14 ounces) quartered artichoke hearts,drained,and chopped
- 3 . 2 garlic cloves, finely chopped
- 4 . 1/2 cup drained and chopped roasted red peppers
- 5 . 1/3 cup shredded parmesan cheese
- 6 . 1/4 cup freshly chopped basil leaves for garnish
- 7 . 1/4cup coarsely chopped pitted kalamata olives
- 8 . 3 tablespoons drained and chopped sun dried tomatoes with herbs in oil plus two tablespoons of oil
- 9 . 1/2 teaspoon of lemon zest
- 10.1 /2 teaspoon of fresly ground black pepper
