Sausage and Mushroom Penne

- 12 oz. sweet Italian sausage, casing removed
- 1 medium onion finely chopped
- 2 packages sliced mushrooms

- 6 English muffins, cut into 1-in. cubes
- 1/4 cup butter, melted
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup red pepper, chopped

- 2 cups milk
- 1/4 tsp salt

- 1 cup milk
- 6 tablespoons flour
- 1 can premium chunk white chicken, undrained
- 1 can cream style yellow sweet corn
- 1 can yellow sweet corn, undrained

- 2 cans fat free/reduced sodium chicken broth
- 1/2 cup chopped yellow onion
- 1 cup chopped red bell peppers

- 3/4 cup shortening
- 1 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1/4 cup water

- 1 (6oz.) package fresh spinach or arugula
- 1 (15oz.) can mandarin oranges, undrained
- 1 pint fresh strawberries, hulled and halved
- 2 tablespoons balsamic vinegar
- 1 tablespoon red wine vinegar
- 1/3 cup Extra Virgin Olive oil
- 1 garlic clove, minced
- 1 tablespoon, chopped fresh basil
- 1/4 cup ine nuts, toasted
- 1/4 cup crumbled goat cheese (optional)
