Barbecued Chuck Roast

This recipe needs to marinate 24 hours, however it is worth the hours
- 2 cloves garlic, crushed
- 1/4 olive oil
- 1/4 cup wine vinegar
- 1/4 sherry
- 2 teaspoons soy sauce
- 1 teaspoon dried rosemary leaves, crushed
- 1/2 teaspoon dry mustard
- 3 to 4 pound beef chuck roast, 2 and 1/2 to 3 inches thick
- 2 tablespoons ketchup
Apple Walnut Bran muffins

1. Preheat oven to 400 degrees
- Wet Ingredients
- 1/4 cup butter or margarine, melted
- 3/4 cup milk
- 1 large egg
- 1 cup bran cereal
- 3/4 cup shredded apple
- Dry ingredients
- 1 cup flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Optional additions
- 1/3 cup chopped toasted walnuts
Italian Grilled Chicken and Vegetable Pasta

- 4 boneless/skinless chicken breast
- 4 oz. potabella mushroom slices
- 1 red or yellow bell pepper, cored, quartered
- 1 medium zucchini, halved
- 1 medium onion, halved
- 1/4 olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon sugar
- 2 garlic cloves, minced
- 1/2 teaspoon each; dried oregano and rosemary leaves, crushed
- 1/4 teaspoon each; black pepper and salt
- 8 oz. angel hair pasta, cooked and drained
- 1 and 1/2 cups tomato, chopped

- 1/2 teaspoon minced garlic
- 1 tablespoon olive oil

- 1 can (15-1/2 ounces) great northern beans, rinsed and drained
- 3/4 cup chicken broth
- 3/4 cup Italian stewed tomatoes
- 1/2 cup frozen cut green beans

- 1 cup real mayonnaise
- 2 (8oz.) softened low fat cream cheese

- 1 teaspoon garlic powder

- 1 and 1/2 cups flour
- 1 and 1/2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1.2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 21 cup cooked mashed carrots
- 3/4 cup bvgetable oil
- 8 and 1/4 ounce can crushed pineapple
- 3 eggs
- 1 tablespoon trot wafer
- 1/2 cup chopped walnuts
- 1/4 cup raisins
- 1 teaspoon pure vanilla
- Cream cheese frosting
- 8 oz. cram cheese

Roma Tomato Bruschetta

- 10 large fresh basil leaves, chopped or 1/2 teaspoon dried basil
- 2 cups Roma (plum) tomatoes, seeded and chopped (about 1 pound)
- 2 tablespoons balsamic vinegar
- Salt and pepper, to taste
- 1/3 cup Extra Virgin Olive oil
- 2 cloves garlic, minced
- 1 loaf french baguette
Fried Ham and Rice

- 2 Tablespoons peanut oil
- 1/3 cup thinly sliced green onions, including tops
- 1/2 teaspoon minced garlic
- 2 eggs lightly beaten
- 1/4 teaspoon salt
- 1/4 teaspoon sugar
- 1/3 lb. diced cooked lean ham
- 1/2 cup frozen peas
- 2 tablespoons soy sauce
- 2 cups cold cooked rice
