Easy Chicken and Pasta

My daughters love this recipe! It is so easy and takes few ingredients making it easy to prepare for their apartmen...
- Variations include:
- 1 tablespoon of olive oil
- 1 pound of skinless/boneless chicken breasts, cut up
- 1 can of cream of mushroom soup
- 2 1/4 cups water
- 1/2 teaspoon dried basil leaves, crushed
- 2 cups frozen vegetable combination (broccoli, cauliflower, carrots)
- 2 cups uncooked corkscrew macaroni
- Grated Parmesan cheese
- Condensed cream of chicken; uncooked tube shaped macaroni, frozen broccoli, corn and red pepper combinations
- Condensed cream of cheddar soup; uncooked spaghetti (broken in half) increase water to 2 and 1/2 cups and use 8oz. of the spaghetti , stir fry or Oriental vegetables, no sauce added
- Condensed cream of celery soup; uncooked bow tie pasta, peas and carrots
Facaccia Dipping Sticks

1. Heat oven to 400 degrees
- 1 can (13.8oz.) refrigerated pizza crust
- 1 tablespoon extra-virgin olive oil
- 1/3 cup red bell pepper strips (1x1/8 inch)
- 3 tablespoons thinly slivered pitted ripe olives
- 1 tablspoon chopped fresh rosemary
- 1/4 teaspoon coarse salt
- 1 cup tomato pasta sauce heated
Layered Spinach Salad

Tear spinach into bite-size pieces and arrange in the bottom of a salad bowl
- 1/2 to 3/4 pound fresh spinach
- 1/2 medium cucumber, thinly sliced
- 1/2 thinly sliced radishes
- 1/4 cup thinly sliced green onions
- 2 hard cooked eggs, sliced
- 3/4 cup Ranch-style salad dressing
- 5 bacon strips, cooked and crumbled
- 1/2 cup Spanish peanuts
Valtrompia Bread Spreads

- "Lite" Parmeasan Spread
- 1 cup low-fat cottage cheese
- 1/4 cup lite mayonnaise
- 3 tablespoons grated Parmesan cheese (yeild 1 cup)
- Savory Spread
- 1 package cream cheese, softened
- 1/2 cup mayonnaise
- 1 package (0,7oz.) dry Italian salad dressing mix
- Yeild 1 and 1/2 cup
Hot Beef and Cheese Dip

Wonderful bread and cracker dip appetizer
- 1 package (8 ounces) cream cheese, softened.
- 1/2 cup dairy sour cream
- 2 tablespoons milk
- 1 jar (2.25 ounces) sliced dried beef, finely chopped with Food Chopper
- 1/3 cup green onions, finely chopped with Food Chopped
- 3 tablespoons green bell pepper, finely chopped with Food Chopper
- 1 tablespoons pimiento, chopped with Food Chopper
- 1/8 teaspoon pepper
- 1/4 cup pecans, coarsely chopped with Food Chopper
Pumpkin Supreme

Preheat oven to 350 degrees
- 1 large can of pumpkin (13oz.)
- 1 can evaporated milk (13oz.)
- 3 eggs
- 1/12 teaspoon salt
- 1 and 1/2 teaspoon cinnamon
- 1 cup brown sugar
- 1 teaspoon vanilla
- 1 box yellow cake mix
- 1 and 1/2 sticks of butter
- 1 cup chopped nuts
Savory Sandwich Ring

Preheat oven to 350. Place dough, seams side down, on large round stone
- 2 packages refrigerated French bread dough
- olive oil
- 3 garlic cloves, pressed
- 1/2 teaspoon each; dried oregano leaves and dried basil leaves
- 2 cups romaine lettuce, chopped
- 1 medium each: onion, green bell pepper, and tomato, all thinly sliced
- 1/2 cup pitted olives, sliced
- 8 ounces thinly sliced deli meat such as: hard salami, bologna, ham, or turkey
- 4 ounces thinly sliced cheese such as: Munenster, Swiss, or American
- 6 tablespoons Italian dressing, divided
Uncle Sam's Berry Pie

1. Preheat oven to 350 degrees 2
- 2 - 9 inch refrigerated pie dough dics
- 4 cups strawberries hulled and sliced in half
- 2 cups blue berries washed and drained
- 1 cup sugar divided
- Heavy whipping cream
- Pure vanilla extract
Chicken and Apple Croissants

In a small mixing bowl stir together chicken, peanuts, and raisins
- 1 (5oz.) can chunk-style chicken, drained
- 1/4 cup unsalted peanuts, chopped
- 1/4 cup raisins
- 1/3 cup mayonnaise or salad dressing
- 2 teaspoons milk
- 1 small apple, cored and chopped
- Lettuce leaves
- 2 croissants, halved horizontally
- (optional 1 teaspoon of curry to add a kick to the dressing)
Oatmeal Raisin Blueberry muffins

1. Preheat oven to 400 degrees
- Wet ingredients
- 1/4 butter or margarine, melted
- 1 cup milk
- 1 large egg
- 2/3 cup old fashioned oats
- Dry ingredients
- 1 and 1/3 cups of flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg
- Additions
- 1 cup fresh or frozen blueberries tossed with 1 tablespoon flour
