Zucchini-bran muffins

1. Preheat oven to 400 degrees
- Wet ingredients
- 1/4 cup butter or margarine, melted
- 3/4 cup milk
- 1 large egg
- 1 cup bran cereal
- 3/4 cup shredded zucchini
- Dry ingredients
- 1 cup flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon each salt and cinnamon
- 1/4 teaspoon nutmeg
- pinch cloves
Lemon Glazed Zucchini Muffins

Preheat oven to 375 degrees
- 2 cups pastry flour
- 2/3 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 2 teaspoons grated lemon peel
- 1/2 cup milk
- 1/3 cup canola oil or olive oil
- 2 eggs
- 1 cup zucchini, shredded, packed into cup
- 1/2 cup powdered sugar
- 2 to 3 teaspoons lemon juice
Rosy Red Salad

From Midwest Living magazine! Create on 4 dinner plates, divided or one large serving platter
- 4 cups fresh baby spinach
- 2 cups arugula
- 2 cups chopped cooked chicken
- 1 cup sliced strawberries
- 1 pound refrigerated roasted beets (quartered)
- 1 thinly sliced shallot
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped toasted hazelnuts.
Sausage Scramble

Heat oven to 325. Cook and stir sausage over medium heat until light brown-drain
- 1/2 lbs. pork bulk sausage
- 18 eggs
- 2 cups milk
- 1 and 1/2 teaspoons salt
- 3 cups shredded cheddar cheese
- 3 cups garlic and onion flavored croutons

1. For filling, in mixing bowl, combine mild and pudding mix; whisk until pudding mixture begins to thicken

- 1 package white chocolate or vanilla instant pudding and pie filling
- 1 container (16 oz.) frozen whipped topping, thawed, divided
- 1 cup milk chocolate morsels
- 1 jar seedless rapberry jam, divided
- 1 bag frozen sweetened raspberries ( not in syrup), thawed
- 1 box (12 oz.) vanilla wafers, divided

Small chocolate yummy pecan and caramel candies
- 2 cups (8oz.) small pecan halves
- 1 (14oz.) package caramels (about 4 dozen)
- 4 milk chocolate bars
Fiesta Burgers

Prepare Fiesta filling and Avocado Topping
- Fiesta Filling
- (1/4 cup finely chopped onion, 1/4 cup finely chopped tomato and 1/4 cup finely chopped green chilies.)
- Avocado Topping
- (1 small avocado, cut up, 1/4 cup dairy sour cream, 1 tablespoon lemon juice, 1/8 to 1/4 teaspoon red pepper sauce)
- Beat all ingredients with whisk until smooth
- 1 and 1/2 pounds ground beef
- 1/4 dry bread crumbs
- 2 tablespoons water
- 1 tablespoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 egg
Caramel Cream Brownie Trifle

- 1 box Betty Crocker Supreme walnut chocolate chunk brownie mix
- Water, vegetable oil and eggs called for on the brownie mix box
- 1 box(4-serving) chocolate fudge instant pudding and pie filling mix
- 2 cups milk
- 1/4 cup caramel topping
- 1 container (8oz.) frozen whipped topping, thawed
Festive Cranberry Mini Muffins

- 1 package Pillsbury Cranberry Quick Bread Mix
- 1/2 cup almonds, finely chopped
- 1 cup milk
- 1/3 cup oil
- 1 teaspoon almond extract
- 1 egg
- Topping-
- 1/2 cup flaked coconut
- 1/4 cup sliced almonds
- 2 tablespoons raspberry jam
- Glaze-
- 1/2 cup powdered sugar
- 2 to 3 teaspoons water
Tortilla Soup

- 1 can (10-1/2 oz.) condensed chicken with rice soup, undiluted
- 1-1/3 cups water
- 1 cup salsa
- 1 cup canned pinto beans, rinsd and drained
- 1 cup canned black beans, rinsed and drained
- 1 cup frozen corn
- 1 cup frozen diced cooked chicken
- 1 teaspoon ground cumin
- Crushed tortilla chips, shredded cheddar cheese and sour cream
