Easy Veggie Soup

Very easy healthy vegetable soup
- 1 large can of V-8 juice
- 1 16 or 20 ounce frozen vegetables
- dry onion soup mix
- 1 pound ground turkey or lean ground beef - browned
- 3/4 cups of water
Easy Minestrone

1. In a 1 and 1/2 qt. slow cooker, combine the first eight ingredients
- 1 can (14-1/2 oz.) chicken broth
- 1 can (14-1/2 oz.) diced tomatoes, undrained
- 1 cup cubed cooked chicken
- 1 can (8oz.) mushroom stems and pieces, drained
- 1/4 cup sliced fresh carrot
- 1/4 cup sliced celery
- 1 bay leaf
- 1/8 teaspoon dried thyme
- 3/4 cup cooked egg noodles
Cauliflower-Ham Au Gratin

Preheat oven to 400. Arrange cauliflower in ungreased rectangular baking dish, 11 x 7 x 11/2; sprinkle with ham
- 4 cups partially cooked fresh cauliflower or 2 packages (10 oz. each) frozen cauliflower, thawed and well drained
- 1 and 1/4 cups chipped fully cooked smoked ham
- 1 can (11 0z. ) condensed Cheddar cheese soup
- 1/4 cup milk
- 2/3 cup Bisquick baking mix (low fat)
- 2 tablespoons firm margarine or butter
- 2 tablespoons shredded Cheddar cheese
- 1/2 teaspoon ground nutmeg
Blueberry Crisp

- 3 to 4 cups of blueberries
- 1/4 to 1/2 teaspoons grated lemon rind
- 1/3 cup sugar
- 1 tablespoon corn starch
- CRISP
- 3/4 cup oatmeal
- 2/3 cup light brown sugar, packed
- 1/4 teaspoon cinnamon
- 1/2 stick butteror margarine
- 1/3 cup flour
- a pinch of salt
- TOPPING
- ice cream
- whipped topping
- cream or milk
Pineapple Upside Down Cake

- 1 box Duncan Hines Pineapple Supreme Cake Mix
- 3 large eggs
- 1/3 cup oil
- 1 and 1/3 cup liquid
- 5 tablespoons butter
- 1/2 cup brown sugar
- 1 can Dole sliced pineapple
- Cherries and pecan halves
Easy Parmesan Garlic Chicken

A very easy and quick chicken dish!
- 1/2 cup of Kraft grated Parmesan cheese
- 1 envelope Good Seasons Italian Salad Dressing mix
- 6 boneless chicken breast halves
- 1/2 teaspoon garlic powder
Almond Streusel Cake

1. Preheat oven to 350 degrees
- Streusel
- 1 cup firmly packed light brown sugar
- 1 cup sliced almonds
- 1/4 cup all-purpose flour
- 3 tablespoons butter or margarine, melted
- 1 teaspoon grated ornge zest
- Cake
- 1/2 cup (1 stick) butter or margarine, softened
- 1/2 cup granulated sugar
- 3 large eggs
- 1 teaspoon grated orange zest
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2/3 cup orange juice
- Glaze
- 1/2 cup confectioners' sugar
- 2 and 1/2 teaspoons orange juice
Wet Burrito

1. Cook together chopped onion, green pepper and beef
- 1 1/2 cups sour cream
- 1 can of cream of mushroom soup
- 1 onion
- 1 lb. lean ground beef
- 1/2 cup chopped green pepper
- 1 can black beans
- 1 can refried beans
- 1 package taco seasoning
- 2 cups cooked long grain rice
- 4 oz. Monterey Jack Cheese shredded
- 10 count tortillas
- 4 cups grated cheese
- black olives
Potato soup

Very easy
- 4 cups diced potatoes
- 1/4 cup sliced carrots
- 1 teaspoon salt
- 2 tablespoons parsley
- 2 cups milk
- 2 tablespoons flour
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 1 and 1/2 water
- 8 ounce Velveeta cheese
Grandma Locke's Frosting

Mix all ingredients well. May need to add more mix or more sugar according to desired consistency
- 8 tablespoons milk
- 1 and 1/2 cups confectionery sugar
- 1/2 teaspoon vanilla
