Zucchini-bran muffins
Ingredients
- Wet ingredients
- 1/4 cup butter or margarine, melted
- 3/4 cup milk
- 1 large egg
- 1 cup bran cereal
- 3/4 cup shredded zucchini
- Dry ingredients
- 1 cup flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon each salt and cinnamon
- 1/4 teaspoon nutmeg
- pinch cloves

Preparation
Step 1
1. Preheat oven to 400 degrees.
2. Grease 12 muffin pan cups.
3. Whisk wet ingredients together and let stand for 10 minutes.
4. Combine dry ingredients in a large bowl.
5. Stir wet ingredients into dry ingredients just until combined.
6. Spoon batter evenly into cups, filling each about 3/4 full.
7. Bake at 400 degrees for 20 to 22 minutes, until toothpick inserted comes out clean.
8. Cool in pans on wire racks 5 minutes. Remove from pans and serve warm, or cool completely, wrap well and freeze up to 1 month. To rehear, loosely wrap each muffin in a paper towel and microwave on high 15 to 20 seconds.
