Jumbo Cheesy Italian Meatballs

I would make them slightly smaller than ONE FOURTH of the mixture--they were good but enormous
- For the sauce:
- EVOO, for brushing
- 1/4 loaf torn, stale Italian bread
- 1 cup whole milk
- 2 large eggs
- 2 lbs. meatloaf mix or ground beef chuck
- 1 small bunch fresh parsley, chopped (about 1 cup)
- 1/2 cup grated parmesan cheese
- 1 clove garlic, grated
- Kosher salt
- 1/2 t red pepper flakes
- 1 mini mozzarella ball for each meatball (4-6-8, depending)
- 2 T EVOO
- 3 cloves garlic, thinly sliced
- 1/2 t red pepper flakes
- 1 28-0z can crushed tomatoes
- 3-4 sprigs basil, plus chopped leaves for topping
- Kosher salt
Aunt Marg's Beans

Nothin' makes baked beans better than adding meat!
- 3 cans "ranch style" beans (I use Grilling Beans Steakhouse Recipe)
- 2 cans kidney beans
- 1/4 cup brown sugar
- 3 T apple cider vinegar
- 1/2 cup minced white or yellow onion
- 1 lb. Jimmy Dean sausage (reduced fat version works just fine), cooked, crumbled, and drained

This one should take the prize in '12!
- 5 slices bacon, cut into 1/2 inch pieces
- 1 lb beef chuck, trimmed and cut into 1/2 inch pieces
- 8 links italian sausage, casings removed
- 2 T olive oil
- 1 medium onion, chopped
- kosher salt and pepper
- 1 green bell pepper, cut into 1/4 inch pieces
- 1 fresh jalapeno, seeded and finely chopped
- 1 clove garlic, finely chopped
- 1 28 oz can crushed tomatoes
- 1 T tabasco sauce
- 1 T chili powder
- 1/2 t cumin
- 1 chile de arbol, crushed, or 1/4 t cayenne pepper
- 1 15 oz can each pinto beans, red kidney beans and black beans, rinsed and drained
- Garnish with sliced radishes, shredded cheese, sliced avocado and tortillas for serving.
Pumpkin Pie Crunch Chex Mix

Kids and adults alike love this mix!
- 1/4 cup brown sugar
- 1 T pumpkin pie spice
- 1/4 cup butter
- 2 t vanilla
- 2 cups Cinnamon Chex cereal
- 2 cups Wheat Chex cereal
- 2 cups Honey Nut Chex cereal
- 8 oz. pecans
Italian Sausage and White Beans

Easy to fix, and really tasty!
- 12 ounces sweet or hot Italian turkey sausage
- Cooking spray
- 1/2 cup chopped onion
- 1/2 t bottled minced garlic oz.
- 1 t dried oregano
- 1 t dried basil
- 1 19 oz. can cannellini beans, drained
- 1 14.5 oz. can diced Italian-style tomatoes, undrained
Chicken Rollups with Fruity Couscous

Really, really good. Works best with those pre-packaged boneless, skinless chicken breasts that are already pretty...
- 1 lb. thin asparagus, trimmed
- 1 T EVOO
- Salt and pepper
- 3 T apricot jam
- 1 T lemon juice
- 6 skinless, boneless chicken breasts (about 5 ozs. each)
Watermelon and Halloumi

Sounds weird but it's really good
- 1 tsp. minced shallot
- 1 tsp. minced garlic
- Kosher salt
- 1/4 cup red wine vinegar
- 1 T honey
- 1/2 cup plus 1 T EVOO
- 2 T sliced almonds, toasted
- 2 T chopped fresh mint
- 8 small wedges watermelon, seedless, rind removed
- 8 oz. Halloumi cheese, cut into 8 slices
Coconut Lime Bread

Different Easter/spring dessert
- 2 c all purpose flour
- 1 c sugar
- 2 t baking powder
- 1/2 t salt
- 1 egg
- 1 c coconut milk, or milk
- 1/3 c butter, melted
- 1 c flaked coconut, toasted
- 3/4 c lime marmalade, melted in microwave
- 1 T lime marmalade, melted
- 1/4 chip or flaked coconut, toasted
Italian Style Chicken and Peppers

Unbelievably easy and a real crowd-pleaser
- 2 cups meatless pasta sauce (I used Ragu's light sauce)
- 2 tsp. olive oil
- 1 medium green pepper, finely chopped
- 4 oz. cream cheese, softenend
- 4 boneless chicken breast halves (4 oz. each although I used bigger ones and just cooked them longer)
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 4 slices part-skim mozzarella cheese (I used grated, and covered the chicken with it--don't know exactly how much I used)
Asparagus and Radish Salad w/Dill Vinaigrette

Great springy salad--add sliced ham and hardboiled egg to make it a meal on its own
- Dressing:
- 3/4 lb. asparagus, tough ends trimmed
- 1 cup fresh or frozen green peas
- 1 cup thinly sliced radishes
- 4 cups spring greens with arugula
- 1 t fresh dill, chopped
- 1/4 c fresh lemon juice
- 1 T dijon mustard
- 2 t sugar (I use 1 Sweet and Lo)
- 1/8 t each salt and pepper
- 1/2 cup white wine vinegar
- 1/2 cup canola oil (I used 1/4 cup)
