Summertime Oatmeal

Easy and delicious
- 1 1/3 cups old fashioned oats
- 3/14 cup fat-free milk (I used 2%)
- 3/4 cup (6 oz.) reduced fat plain yogurt
- 1/4 cup honey
- fruit of your choice, chopped toasted nuts (optional)
Sausage-stuffed Zucchini

Really delicious and easy
- 1 t EVOO plus more for baking dish
- 4 medium zucchini, halved length-wise
- 1 lb spicy Italian sausage, removed from casing
- 1 small onion, coarsely chopped
- 3 cloves garlic, minced
- 1 cup coarse fresh breadcrumbs (I used 1/3 cup regular breadcrumbs and it worked fine)
- 2 t lemon zest, plus 1 T lemon juice
- 1 1/2 oz grated parmesan, plus shavings for garnish
- 1 t coarse salt
- 1 large egg, slightly beaten
Cheese Tortellini w/Spinach, Peas, and Brown Butter

Don't put more tortellini in than the recipe calls for, no matter how much you are tempted to do so--they swell up
- 1 pound fresh or frozen cheese tortellini
- 1 cup frozen peas
- 4 T unsalted butter
- 1 small bunch flat leaf spinach, thick stems removed, about 6 cups
- 1 medium beefsteak tomato
- 1 t finely grated lemon zest, plus 1 T fresh lemon juice
- Kosher salt and black pepper
Vidalia Onion Dip

A real crowd-pleaser--OK if other kinds of onions are used, but not as great as when real Vidalia onions are in se
- 1 large Vidalia or Walla Walla onion, coarsely chopped
- 1 8 oz. package shredded Italian cheese mix
- Up to 2 cups mayo
Arroz con Pollo

Served as get-better comfort food for Tim after he got a stomach bug and threw up for the first time in 39 years
- 12 boneless, skinless chicken thighs
- 1/2 t salt
- 1/4 t freshly ground black pepper
- 1 1/2 t dried oregano, divided
- 1 T vegetable oil
- 2 T fresh lime juice
- 1 cup chopped onion
- 1/2 cup chopped green pepper
- 2 garlic cloves, minced
- 3/4 t ground cumin
- 1 1/2 cups Arborio rice OR yellow rice uncooked
- 1/2 cup diced ham
- 2 1/4 cups fat-free, less sodium chicken broth
- 1 14.5 oz. can diced tomatoes, undrained
- 1/2 cup frozen petite peas, thawed
- use 1 t turmeric to color white rice if that's what you use
Vanilla Pudding Fruit Dip

Use as a dip or spread on bottom of quiche dish or other round pan and layer fruit slices on top
- 1 package vanilla instant pudding mix
- 2 cups sour cream
- Assorted fruit slices
Tuscan Sausage & Bean Dip

A real pain to make, but it is soooo good and makes a lot
- 1 lb. bulk hot Italian sausage
- 1 medium onion, finely chopped
- 4 garlic cloves, minced
- 1/2 cup dry white wine or chicken broth (I prefer wine)
- 1/2 t dried oregano
- 1/4 t salt
- 1/4 t dried thyme
- 1 8 oz. pkg cream cheese
- 1 6 oz. pkg baby spinach, coarsely chopped
- 1 15 oz. can cannellini, rinsed and drained
- 1 cup chopped seeded tomatoes
- 1 cup part skim shredded mozzarella
- 1/2 cup shredded or grated Parmesan
- Crackers and/or toasted baguette slices
White Bean Chicken Chili

Green chiles and cilantro add flavor but not heat
- 2 T corn oil
- 1 large onion, chopped
- 4 large garlic cloves, chopped
- 1 T cumin
- 1 t dried oregano
- 1/2 t anise seed
- 1/2 t dried crushed red pepper
- 1 lb. boneless, skinless chicken thighs, cut into 1-inch pieces
- 3 15 oz. can cannellini beans
- 1 cup canned chicken broth (I use fat-free)
- 1 7 oz. can diced green chiles
- 1/2 cup whipping cream
- Grated cheddar cheese
- Chopped fresh cilantro
Tex-Mex Cranberry Salsa

You need to be a real cranberry freak to like this--different but delicious
- 1 cup water
- 1 c sugar
- 1 12 oz. package fresh cranberries
- 2 T chopped jalapenos (from can or jar)
- 1 t dried cilantro
- 1/4 t cumin
- 1 green onion (white and green parts)
- 1 t fresh lime juice
Creamy Mustard Dip

Kids love this served in individual cupcake papers with pretzel sticks
- 8 oz. sour cream
- 2 t yellow mustard
- 1/2 t onion salt
- Pretzel sticks, crudite
