Mini "Whatever" Frittatas

You can use whatever cheese, meat (or go meatless), veggies you have on hand
- 1/4 lb. cooked ham, turkey sausage, or bacon (note: meat is optional) and/or chopped peppers, asparagus, roasted red peppers, spinach, or whatever
- 1 cup shredded cheese (I use low fat, you can use whatever you want)
- 6 eggs
- 4 egg whites
- 3 T herb of your choice (chives, basil, etc.)
- 2 T fat-free milk (I have also used water and a pinch of cream of tartar with good results)
- 1/4 t each salt and pepper
Peppadew Margarita

Rub the rim of the glass with a lime wedge, dip rim in flaky sea salt, and fill glass with ice
- 2 ounces silver tequila
- Sea salt
- 1 ounce Cointreau
- 1 ounce lime juice
- 1 tablespoon Peppadew brine

Breakfast Sausage Balls

Really good, makes a lot, and you can freeze them to serve later!
- 1 lb. hot pork sausage
- 3 cups Bisquick
- 1 lb. sharp shredded Cheddar cheese
- 1/2 t smoked paprika
- 3/4 - 1 cup whole milk
Mini Corn Dog Muffins

Unbelievably simple and delicious!
- 1 pkg. corn muffin mix
- 12 cubes of Velveeta cheese
- 3 beef franks, cut into 4 pieces
- Honey mustard for dipping
Baked Brie with Fig Sauce

This is a killer and so easy--plus you can get the ingredients ahead and keep on hand for dreaded drop in guests!
- 1 large (16 oz.) Brie round
- 1 jar fig sauce
- Assorted crackers
Sourdough Strata with Tomatoes and Greens

Not too eggy, not too cheesy
- 8 plum tomatoes, quartered lenghwise
- 1 T chopped fresh thyme
- 2 T EVOO
- Kosher salt and freshly ground black pepper
- 3 cups whole milk
- 8 large eggs
- 10 oz. grated Fontina cheese
- 1 cup grated parmesan cheese
- 1/4 t cayenne pepper
- 1 1 lb. loaf sourdough bread, cut into 1 inch cubes
- 4 cups chopped greens, such as kale, spinach or arugula
Chut-Nut Ball

Really unique blend of flavors
- 2 8 oz. packages cream cheese, softened
- 1 9 oz. jar hot mango chutney
- 1/2 t curry powder
- 1/2 t dry mustard
- 2/3 cup sliced almonds
Muffin Cup Cheddar Beef Pies

Great little breakfast hand grenades--but would be good for dinner, too!
- 2 loaves (1 lb. each)frozen bread dough
- 2 lbs. ground beef (I used 1 lb. ground beef and 1 package fully-cooked turkey breakfast sausage links, finely chopped and added to cooked ground beef)
- 1 8 oz. can mushroom stems and pieces, drained
- 1 1/4 cup shredded cheddar cheese
- 1 1/2 t Italian seasoning
- 1 t garlic powder
- 1/2 t salt
- 1/4 t pepper
- Spaghetti sauce or ranch dressing for dipping

Lemon Herbed Shrimp with White Beans

Really easy and full of flavor
- 1/2 small shallot, finely chopped
- 5 garlic cloves, minced, divided
- 2 T fresh lemon juice
- 1 1/2 t lemon zest, divided
- 3 T fresh parsley, minced, divided
- Salt and pepper to taste
- 6 T EVOO
- 1 lb. large raw shrimp, peeled and deveined
- 1 t seafood seasoning (I used Old Bay)
- 1/4 cup butter
- 2 15 oz. cans cannellini beans, rinsed and drained
