- 3 1/2 cups sugar
- 3/4 cup brandy
- 2 t cinnamon
- 1/2 t nutmeg
- 1/2 t ground cloves
- 2 pkgs fresh cranberries
Gluten-free Baked Oatmeal Casserole

Thank heaven chocolate chips are gluten-free!
- 2 cups gluten-free rolled oats
- 1/3 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup walnut pieces
- 1 cup raspberries {any berries work}
- 1/2 cup milk chocolate chips
- 2 cups milk
- 1 large egg
- 3 tablespoons butter, melted
- 1 tablespoon vanilla extract
- 1 ripe banana, peeled, 1/2-inch slices
German Beer Cheese Spread

I used a Stella Artois for the beer and it was great
- 1 lb. sharp cheddar cheese, cut into 1/2-inch cubes
- 1 T Worcestershire sauce
- 1 1/2 t prepared mustard
- 1 small garlic clove, minced
- 1/4 t salt
- 1/8 t pepper
- 2/3 cup German beer
- Pretzels
Cranberry Bleu Cheese Ball

Very yummy for the holidays!
- 8 oz. cream cheese, softened
- 1 cup sharp white cheddar cheese, shredded (I bought it shredded)
- 4 oz. bleu cheese crumbles
- 6 oz. craisins
Layered Pumpkin Loaf

Really great for dessert or brunch "sweet"
- 1 cup canned pumpkin (organic is best)
- 1 cup plus 2 T granulated sugar, divided
- 1/2 cup packed brown sugar
- 4 egg whites, divided
- 1/2 cup fat-free milk
- 1/4 cup canola oil
- 2 cups flour
- 2 1/2 t baking powder
- 2 t pumpkin pie spice
- 1/4 t salt
- 1 package 8 oz. Neufchatel cheese, softened
Broiled Grapefruit w/Ginger and Maple Cream

Good even without the cream
- 2 large ruby red grapefruit, halved
- 1/2 cup turbinado sugar (I used much less, just a sprinkle)
- 2 t finely chopped crystallized ginger
- 3 T heavy cream
- 1/3 c plain 2% Greek yogurt, reduced fat
- 2 T maple syrup
- 1/4 t vanilla extract
Boursin Creamed Spinach

Pretty easy to make and you can make ahead!
- For the spinach filling:
- 1 cup diced onion
- 2 T unsalted butter
- 4 T all purpose flour
- 2-3 cups milk
- 1 - 1 1/2 cups heavy cream
- Almost two big tubs Boursin Garlic and Herb cheese (Lite is fine), approx. 11 oz. each
- 4 pkgs. frozen chopped spinach, thawed and squeezed dry of moisture (10 oz pkgs)
- 6 T grated parmesan
- 3 t coarsely grated lemon zest
- Salt, white pepper, cayenne pepper, ground nutmeg to taste
- For the crumb topping:
- 1 2/3 cup coarse fresh bread crumbs (I pulverized some bakery bread stuffing mix)
- 3 T unsalted butter, melted
- 3 T olive oil
- Salt and pepper to tasted
Orange Chipotle Spiced Pecan Mix

Not as spicy as it sounds but great flavor mix
- 1 T grated orange rind
- 1 T fresh orange juice
- 1 large egg white
- 2 cups pecan halves
- 1 T brown sugar
- 1 t kosher salt
- 1 t ground chipotle chile pepper
- Cooking spray
- 1/2 cup craisins
One Pan Pasta

So easy and so surprisingly good--great for vacation cottage/cabin/boat (small kitchen) cooking!
- Depending on size of skillet, 2/3 to one full small box of wheat or multi-grain pasta
- One med or large onion, sliced vertically
- 3-5 cloves fresh garlic, sliced
- Fresh basil leaves, sea salt, red pepper flakes, ground black pepper to taste
- A "glug" of olive oil
- Water
Bean, Corn and Rice Salad

Very easy and a great blend of spices
- Sauce:
- 3 1/2 c. cooked rice (1 c. raw)
- 1 16 oz. can black beans, drained
- 1 1/2 c. canned corn, drained
- 1/3 c. chopped scallions
- 2 jalapenos, seeded and minced (fresh or from a jar)
- 1/3 c. corn oil
- 2 T lime juice
- 1 T brown sugar
- 1 T chili powder
- 1 T salt
- 1/2 t cumin
