Cranberry Walnut Slaw

Very easy, very tasty--a nice Christmas alternative to a tossed salad
- 1/2 cup white wine
- 1 T Dijon mustard
- 1 t sugar
- 1 t celery seed
- 3/4 t salt
- 1/2 t pepper
- 1/3 cup walnut oil
- 1 T minced fresh tarragon (or 1 t dried tarragon)
- 6 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup dried cranberries
- 1/4 large sweet onions, thinly sliced
- 1 cup chopped walnuts, toasted
Grilled Pizza Dough

Great with rosemary and sea salt to dip in olive oil, or use as the base for a gourmet pizza
- 1 ball store-made fresh pizza dough
- Rosemary and sea salt
- OR
- Pizza toppings of your choice (meat should be cooked ahead)
Golden Mashed Potatoes with Leeks and Sour Cream

You don't have to peel the potatoes! I make the day before and then warm up in oven on "day of"
- 4 lbs. large Yukon Gold potatoes, unpeeled and preferably organic, scrubbed
- 1 stick unsalted butter
- 4 leeks, white and light green parts, finely chopped and rinsed well
- 1 cup sour cream, at room temperature
- 1 cup milk, heated to a simmer
- 1/2 t salt, plus more to taste
- 1 t freshly ground black pepper, plus more to taste
Chicken Piccata

Lots of capers makes this dish deelish!
- 4 6 oz. boneless, skinless chicken breast halves
- 2 oz. all purpose flour, about 1/2 cup, divided
- 1/2 t kosher salt
- 1/4 t freshly ground black pepper
- 2 1/2 T butter, divided
- 2 T olive oil, divided
- 1/4 cup finely chopped scallions
- 4 medium garlic cloves, thinly sliced
- 1/2 cup dry white wine
- 3/4 cup fat-free, lower sodium chicken broth, divided
- 2 T fresh lemon juice
- 1 1/2 T drained capers (I use more)
- 3 T coarsely chopped fresh flat-leaf parsley
Grilled New Potato Packet

Amazing every time--experiment with different spices and dressings!
- 1/2 lb. each red and white baby new potatoes or fingerlings
- 2 T water
- 2 t EVOO
- 3 T sun-dried tomato salad dressing
- 2 t grated parmesan
- 1 T chopped fresh parsley
Taco Salad

Catherine's recipe, introduced on the boat trip of 2010
- Cook one pound of lean ground beef in skillet; drain. Mix w/chopped lettuce, grated cheddar, sliced mushrooms, chopped tomatoes, chopped onions. Add Catalina dressing and toss. Add Fritos and more dressing if needed.
- Mix and serve.
Roasted Cauliflower

- 1 head cauliflower, cut into florets
- Olive oil to coat

Nutty Brown Sugar Bacon

The cayenne gives it a great little kick!
- 8 slices thick-sliced bacon
- 1/3 cup packed brown sugar
- 4 t Dijon mustard
- 1 t cayenne pepper
- 1/3 cup chopped pecans
Hot Artichoke Dip

Boat style. Open cans.
- 1 15 oz. can artichoke hearts, drained and coarsely chopped
- 1 4 oz. can green chiles, drained and chopped
- 1/4 cup low fat mayo
- 1/4 t tabasco
- 1/4 t pepper
Crunchy Broccoli Salad

Nice alternative to cole slaw or other broccoli salads
- 8 cups fresh broccoli florets
- 1 bunch green onions, thinly sliced
- 1/2 cup craisins
- 3 T canola oil
- 3 T seasoned rice vinegar
- 2 T sugar
- 1/4 cup sunflower seed kernels
- 3 bacon strips, cooked and crumbled (I used Hormel bacon bits)
